🍽️ Juicy Beef with Creamy Pepper Sauce

Ingredients
- 4 slices beef steak (approx. 180 g each, e.g. fillet or rump)
- salt
- pepper
- 2 tbsp vegetable oil
- 200 ml red wine
- 200 ml veal stock
- 2 thyme sprigs
- 1 tsp cracked pepper
- 2 tbsp butter
- 200 g pearl onions
Instructions
- 1. Preheat the oven to 140 degrees Celsius using the top and bottom heat setting.
- 2. Rinse the meat briefly under cold water and then pat it completely dry with kitchen paper.
- 3. Season the meat generously with salt and freshly ground pepper.
- 4. Heat oil in a large frying pan and sear the meat on both sides until it forms a brown crust.
- 5. Place the meat on a roasting rack set over a drip pan and put it in the preheated oven.
- 6. Cook the meat in the oven for about 10 minutes. Adjust the time depending on the thickness of the steak and how well-done you like it.
- 7. Take the pan used for searing the meat off the heat and deglaze it with wine (scrape up the caramelized bits).
- 8. Add veal stock and fresh thyme sprigs to the pan and let the sauce reduce until it has decreased by about half.
- 9. Remove the pan from the heat and take out the thyme sprigs from the sauce.
- 10. Stir in ground pepper and cubes of cold butter until the sauce is creamy.
- 11. Finally, season the sauce to taste with salt.
- 12. Peel the onions and cut them into thin wedges.
- 13. Sauté the onion wedges in the remaining butter in a pan until they are soft and translucent.
- 14. Place the finished steaks on the plates and pour the pepper sauce over them.
- 15. Garnish the dish with the sautéed onions and serve immediately.
