🍽️ Steak with Green Sauce

Ingredients
- 1 bunch cilantro (at 20 g)
- 50 g spring onions
- 75 g American pistachios (roasted and salted; 40 g peeled)
- 80 ml olive oil
- 0.5 lime
- salt
- pepper
- 450 g waxy potatoes
- 400 g entrecôte
Instructions
- 1. Wash the cilantro and spring onions thoroughly, pat dry, and chop roughly. Puree well in a food processor together with the pistachios and 70 ml olive oil. Squeeze the lime, add the juice to the green sauce, and season with salt and pepper.
- 2. Peel the potatoes, cut into large pieces, and cook with the skin in boiling salted water for 10 minutes. Then drain. Heat the remaining olive oil in a pan. Add the potatoes to the pan and fry until golden brown over medium heat for about 15 minutes, turning occasionally.
- 3. Season the steaks on both sides with salt and pepper and cook on the grill (or in a pan) to your desired doneness. Remove from the grill and let rest for 5 minutes. Serve the steaks together with the green sauce and the roasted potatoes.
