  1. 1. Wash the cilantro and spring onions thoroughly, pat dry, and chop roughly. Puree well in a food processor together with the pistachios and 70 ml olive oil. Squeeze the lime, add the juice to the green sauce, and season with salt and pepper.
  2. 2. Peel the potatoes, cut into large pieces, and cook with the skin in boiling salted water for 10 minutes. Then drain. Heat the remaining olive oil in a pan. Add the potatoes to the pan and fry until golden brown over medium heat for about 15 minutes, turning occasionally.
  3. 3. Season the steaks on both sides with salt and pepper and cook on the grill (or in a pan) to your desired doneness. Remove from the grill and let rest for 5 minutes. Serve the steaks together with the green sauce and the roasted potatoes.
