🍽️ Juicy Beef Steaks with Creamy Pineapple-Ginger Sauce

Ingredients
- 0.5 pineapple (approx. 300 g)
- 2 cm fresh ginger
- 4 tbsp sesame oil
- 200 ml pineapple juice
- 1 tsp fresh, green peppercorns (or pickled ones)
- 1 tsp honey
- 1 dash lemon juice
- salt
- 4 beef steaks (approx. 180 g each, e.g. from the rump)

Instructions
- 1. Peel the pineapple and remove the hard core from the center.
- 2. Cut the pineapple flesh into small cubes.
- 3. Peel the ginger and grate it finely.
- 4. Heat two tablespoons of sesame oil in a pan over low heat.
- 5. Add the pineapple cubes and the grated ginger to the hot pan.
- 6. Sauté the mixture, stirring occasionally.
- 7. Pour a small splash of water into the pan.
- 8. Let the sauce simmer for about ten minutes until the pineapple is soft.
- 9. Puree the soft pineapple mixture finely with a hand blender.
- 10. Add the peppercorns to the sauce and stir them in.
- 11. Let the sauce simmer with the peppercorns for another five minutes.
- 12. Season the sauce to taste with honey, lemon juice, and salt.
- 13. Remove the sauce from the heat and set it aside.
- 14. Preheat the oven to 100 degrees Celsius with top and bottom heat.
- 15. Rinse the steaks briefly under cold water.
- 16. Pat the steaks completely dry with kitchen paper.
- 17. Season the steaks generously with salt and black pepper.
- 18. Heat the remaining oil in a large frying pan.
- 19. Sear the steaks on both sides until they form a crust.
- 20. Place the steaks on a wire rack.
- 21. Place a drip pan under the rack to catch rising fat.
- 22. Place the rack with the steaks into the preheated oven.
- 23. Let the steaks cook in the oven for about ten minutes.
- 24. Remove the steaks from the oven and let them rest briefly.
- 25. Serve the steaks on plates.
- 26. Pour the warm pineapple-ginger sauce over the steaks.
