  1. 1. Wash the potatoes thoroughly and parboil them with the skin in salted water for 20 minutes.
  2. 2. Drain the potatoes, let them steam off briefly, wrap them in aluminum foil, and bake them in the preheated oven at 220 °C for about 35 minutes.
  3. 3. Sear the steaks in a hot pan with butter for about 3 to 4 minutes on each side, seasoning with salt and pepper.
  4. 4. Mix the crème fraîche with cream, lemon juice, and chopped parsley, then season with salt and pepper.
  5. 5. Remove the potatoes from the oven and unwrap them. Plate the steaks along with the potatoes and a small salad, adding a dollop of the herb crème fraîche on top of each potato.
