  2. 2. Place the different peppercorns and coriander seeds into a mortar.
  3. 3. Coarsely crush the spices using the pestle.
  4. 4. Finely chop the rosemary and thyme.
  5. 5. Mix the chopped herbs with the ground spice mixture.
  6. 6. Pour the spice mixture onto a flat plate.
  7. 7. Rinse the beef steaks briefly under running water.
  8. 8. Pat the steaks completely dry with a kitchen towel.
  9. 9. Turn the steaks in the spice mixture until they are coated all over.
  10. 10. Heat oil in a large frying pan.
  11. 11. Sear the steaks over high heat.
  12. 12. Cook each steak for about 3 to 5 minutes on each side.
  13. 13. Adjust the cooking time according to your desired level of doneness.
  14. 14. Season the steaks with salt after frying.
  15. 15. Wrap the steaks tightly in aluminum foil.
  16. 16. Place the wrapped steaks into the preheated oven.
  17. 17. Let the steaks rest in the oven for 8 to 10 minutes.
