  2. 2. Place the broccoli in a steamer basket over a pot of boiling water.
  3. 3. Lightly salt the broccoli and drizzle it with one tablespoon of oil.
  4. 4. Cover the pot and steam the broccoli for about 8 minutes until tender.
  5. 5. Rinse the spring onions and slice them into diagonal rings.
  6. 6. Heat one to two tablespoons of oil in a pan and sauté the spring onions briefly.
  7. 7. Deglaze the pan with the wine and let the liquid simmer for two to three minutes.
  8. 8. Remove the pan from the heat and stir in the cream and egg yolks.
  9. 9. Heat the sauce while stirring constantly until it thickens, but do not let it boil again.
  10. 10. Season the sauce with salt to finish.
  11. 11. Rinse the steaks and pat them dry with a kitchen towel.
