🍽️ Juicy Beef Steaks with Creamy Broccoli Sauce

Ingredients
- 600 g stalk broccoli
- salt
- 4 tbsp olive oil
- 2 spring onions
- 200 ml dry white wine
- 100 ml whipping cream
- 2 egg yolks
- 4 beef steaks approx. 200 g each (e.g. entrecôte)
- pepper (from the mill)
Instructions
- 1. Rinse the broccoli under running water.
- 2. Place the broccoli in a steamer basket over a pot of boiling water.
- 3. Lightly salt the broccoli and drizzle it with one tablespoon of oil.
- 4. Cover the pot and steam the broccoli for about 8 minutes until tender.
- 5. Rinse the spring onions and slice them into diagonal rings.
- 6. Heat one to two tablespoons of oil in a pan and sauté the spring onions briefly.
- 7. Deglaze the pan with the wine and let the liquid simmer for two to three minutes.
- 8. Remove the pan from the heat and stir in the cream and egg yolks.
- 9. Heat the sauce while stirring constantly until it thickens, but do not let it boil again.
- 10. Season the sauce with salt to finish.
- 11. Rinse the steaks and pat them dry with a kitchen towel.
- 12. Season the steaks with salt and pepper.
- 13. Fry the steaks in the remaining oil in a grill pan for two to five minutes on each side.
- 14. Adjust the cooking time based on the thickness of the meat and your desired level of doneness.
- 15. Serve the steaks together with the steamed broccoli and the sauce.
