🍽️ Aromatic Steak with Green Beans

Ingredients
- 2 garlic cloves
- 2 sprigs rosemary
- 3 tbsp olive oil
- pepper (from the mill)
- 4 beef fillet steaks (approx. 160 g each)
- 600 g green beans
- salt
Instructions
- 1. Peel the garlic cloves and chop them roughly.
- 2. Rinse the rosemary, shake it dry, and strip the needles from the stems.
- 3. Finely chop the rosemary.
- 4. Mix the garlic and rosemary with two to three tablespoons of oil.
- 5. Season the oil-herb mixture with black pepper.
- 6. Rinse the steaks and pat them dry with a kitchen towel.
- 7. Rub the steaks with some oil.
- 8. Cover the steaks and let them rest at room temperature for about one hour.
- 9. Wash the green beans and trim them.
- 10. Bring water to a boil and salt it.
- 11. Cook the beans in the salted water for about eight minutes (this is called blanching).
- 12. Immediately shock the beans with cold water to stop the cooking process.
- 13. Let the beans drain well.
- 14. Preheat the oven to 140 degrees Celsius (convection or top and bottom heat).
- 15. Take the steaks out of the oil and remove the herb mixture.
- 16. Season the steaks with salt on both sides.
- 17. Heat an ovenproof pan until it is very hot.
- 18. Sear the steaks on all sides for three to four minutes until golden brown.
- 19. Distribute the prepared garlic-rosemary oil over the steaks in the pan.
- 20. Place the pan in the preheated oven.
- 21. Bake the steaks for about ten minutes (the time may vary depending on the desired internal temperature).
- 22. Toss the drained beans in the remaining oil fond from the pan until they are hot.
- 23. Finally season the beans with salt.
- 24. Serve the beans together with the steaks.
