  1. 1. Wash and peel the potatoes thoroughly. Then cut them into small pieces or cubes. Rinse with cold water and dry well with a kitchen towel.
  2. 2. Heat the oil in a deep fryer to 160 degrees Celsius and par-fry the potatoes in batches until light yellow. Then remove from the oil, let drain and cool slightly.
  3. 3. Fry the meat in hot ghee for about 2 to 4 minutes each (depending on desired doneness), then remove, season with salt and pepper, and wrap in aluminum foil to keep warm. Deglaze the pan with wine, let it simmer briefly and season with salt and pepper.
  4. 4. Heat the frying oil to 180 degrees Celsius. Deep fry the potatoes in it for a few minutes until golden brown and crispy.
  5. 5. Remove the potatoes, place on kitchen paper and let drain briefly. Season with salt.
  6. 6. Take the steaks out of the foil and stir the released meat juices into the sauce.
  7. 7. To serve, place the steaks together with the wine sauce on pre-warmed plates, sprinkle with coarse pepper and add the potato pieces.
