  1. 1. Thoroughly wash the celery under running water.
  2. 2. Cut off the tough ends of the stalks.
  3. 3. Slice the celery into thin, even rounds.
  4. 4. Peel the shallots and remove the outer skin.
  5. 5. Finely chop the shallots.
  6. 6. Place the celery slices, chopped shallots, chopped eggs, and walnuts into a large bowl.
  7. 7. Mix all ingredients in the bowl thoroughly.
  8. 8. Put the mayonnaise, cider (apple cider vinegar), mustard, salt, and pepper into a small separate bowl.
  9. 9. Stir the sauce ingredients until smooth and creamy.
  10. 10. Wash the lettuce leaves thoroughly.
  11. 11. Dry the lettuce leaves well, for example with a kitchen towel or a salad spinner.
  12. 12. Arrange the dry lettuce leaves on a large serving platter.
  13. 13. Place the celery mixture in the center of the lettuce leaves.
  14. 14. Pour the prepared sauce evenly over the celery mixture.
  15. 15. Sprinkle some paprika powder on top as decoration.
  16. 16. Serve the salad immediately.
