  1. 1. Wash the celery stalks thoroughly.
  2. 2. Remove the tough outer strings and the ends.
  3. 3. Cut the celery into pieces approximately 14 centimeters long.
  4. 4. Bring a pot of salted water to a boil.
  5. 5. Boil the celery pieces in it for about 6 minutes.
  6. 6. The celery should remain crisp-tender, so do not overcook it.
  7. 7. Turn on the oven and set it to 200 degrees Celsius with top heat.
  8. 8. Wash the tomatoes under running water.
  9. 9. Remove the hard stem attachment at the top.
  10. 10. Dip the tomatoes briefly into the boiling water used for the celery.
  11. 11. Remove them immediately and shock them with cold water.
  12. 12. Peel the skin off the tomatoes.
  13. 13. Cut the tomatoes into quarters.
  14. 14. Remove the inner core containing the seeds.
  15. 15. Dice the tomato flesh into small pieces.
  16. 16. Remove the rind from the Taleggio cheese.
  17. 17. Dice the cheese into small pieces as well.
  18. 18. Mix the diced tomatoes and cheese with the white wine.
  19. 19. Drain the cooked celery.
  20. 20. Let the celery drain well.
  21. 21. Place the celery pieces side by side in a baking dish.
  22. 22. Place the tomato and cheese mixture in the center on top of the celery.
  23. 23. Place the dish in the oven for about 8 minutes.
  24. 24. The cheese should start to melt.
  25. 25. Season the dish to taste with fresh pepper.
  26. 26. Serve the dish warm.
