  1. 1. Thoroughly wash the gooseberries.
  2. 2. Remove the stems from the berries.
  3. 3. Place the berries and sugar into a large pot.
  4. 4. Lightly mash the berries using a potato masher.
  5. 5. Heat the mixture while stirring regularly until it comes to a boil.
  6. 6. Pour the hot mixture into a jelly bag suspended over a bowl.
  7. 7. Let the liquid drip slowly into the bowl.
  8. 8. Measure the drained liquid.
  9. 9. Top up the liquid with apple juice to reach 500 milliliters if necessary.
  10. 10. Mix the juice with gelling sugar.
  11. 11. Bring the mixture back to a boil.
  12. 12. Let the jelly mixture bubble for about three to four minutes.
  13. 13. Stir occasionally while cooking.
  14. 14. Skim off the foam that forms with a spoon.
  15. 15. Rinse the mint under running water.
  16. 16. Shake the mint dry.
  17. 17. Pluck the mint leaves from the stems.
  18. 18. Chop the mint leaves finely.
  19. 19. Remove the pot with the jelly mixture from the heat.
  20. 20. Drop a small amount of jelly mixture onto a cold saucer.
  21. 21. Place the saucer in the refrigerator for a short time.
  22. 22. Check if the jelly mixture has set.
  23. 23. Boil the mixture briefly again if it is still too liquid.
  24. 24. Stir the chopped mint into the jelly mixture.
  25. 25. Rinse the jars with hot water.
  26. 26. Fill the hot jelly mixture into the warm jars as quickly as possible.
  27. 27. Seal the jars tightly with the lids.
  28. 28. Place the sealed jars upside down for ten minutes.
  29. 29. Turn the jars upright again after ten minutes.
  30. 30. Let the jars cool down completely at room temperature.
