🍳 Fresh Gooseberry Jelly with Mint

Ingredients
- 1 kg gooseberries (green- or yellow-fruited variety)
- 50 g raw cane sugar
- 250 g jam sugar made from raw cane sugar (2:1)
- 1 bunch mint (20 g)
Instructions
- 1. Thoroughly wash the gooseberries.
- 2. Remove the stems from the berries.
- 3. Place the berries and sugar into a large pot.
- 4. Lightly mash the berries using a potato masher.
- 5. Heat the mixture while stirring regularly until it comes to a boil.
- 6. Pour the hot mixture into a jelly bag suspended over a bowl.
- 7. Let the liquid drip slowly into the bowl.
- 8. Measure the drained liquid.
- 9. Top up the liquid with apple juice to reach 500 milliliters if necessary.
- 10. Mix the juice with gelling sugar.
- 11. Bring the mixture back to a boil.
- 12. Let the jelly mixture bubble for about three to four minutes.
- 13. Stir occasionally while cooking.
- 14. Skim off the foam that forms with a spoon.
- 15. Rinse the mint under running water.
- 16. Shake the mint dry.
- 17. Pluck the mint leaves from the stems.
- 18. Chop the mint leaves finely.
- 19. Remove the pot with the jelly mixture from the heat.
- 20. Drop a small amount of jelly mixture onto a cold saucer.
- 21. Place the saucer in the refrigerator for a short time.
- 22. Check if the jelly mixture has set.
- 23. Boil the mixture briefly again if it is still too liquid.
- 24. Stir the chopped mint into the jelly mixture.
- 25. Rinse the jars with hot water.
- 26. Fill the hot jelly mixture into the warm jars as quickly as possible.
- 27. Seal the jars tightly with the lids.
- 28. Place the sealed jars upside down for ten minutes.
- 29. Turn the jars upright again after ten minutes.
- 30. Let the jars cool down completely at room temperature.
