🍽️ Spicy-Sweet Gooseberry and Onion Chutney

Ingredients
- 600 g gooseberries
- 2 onions
- 2 chili peppers
- 300 ml wine vinegar
- salt
- 1 tbsp cornstarch
- 6 bay leaves
- 200 g sugar
- 2 tbsp mustard
- 1 untreated lemon (zested peel)
Instructions
- 1. Thoroughly wash the gooseberries.
- 2. Remove the stems from the berries.
- 3. Halve each gooseberry.
- 4. Peel the onions.
- 5. Dice the onions into small cubes.
- 6. Rinse the chili peppers under running water.
- 7. Remove the seeds from the chili peppers.
- 8. Slice the chili peppers lengthwise.
- 9. Cut the chili peppers into fine pieces.
- 10. Place the prepared gooseberries, chili pieces, and onion cubes into a pot.
- 11. Pour 1/8 liter of vinegar over the ingredients.
- 12. Place the lid on the pot.
- 13. Simmer the mixture with the lid on for about 10 minutes.
- 14. Mix the cornstarch with the remaining vinegar in a separate bowl.
- 15. Pour the vinegar-cornstarch mixture into a clean pot.
- 16. Add the sugar.
- 17. Add the mustard.
- 18. Grate the lemon zest and add it to the pot.
- 19. Add a pinch of salt to the pot.
- 20. Add the bay leaves to the pot.
- 21. Stir constantly and bring the mixture to a boil.
- 22. Let the sauce simmer for 10 minutes.
- 23. Stir the cooked gooseberries into the sauce.
- 24. Stir the onion-chili mixture into the sauce.
- 25. Simmer everything for another 5 minutes while stirring constantly.
- 26. Taste the chutney to adjust the flavor.
- 27. Immediately fill the hot chutney into clean jars.
- 28. Seal the jars tightly immediately.
