  1. 1. Thoroughly wash the gooseberries.
  2. 2. Remove the stems from the berries.
  3. 3. Halve each gooseberry.
  4. 4. Peel the onions.
  5. 5. Dice the onions into small cubes.
  6. 6. Rinse the chili peppers under running water.
  7. 7. Remove the seeds from the chili peppers.
  8. 8. Slice the chili peppers lengthwise.
  9. 9. Cut the chili peppers into fine pieces.
  10. 10. Place the prepared gooseberries, chili pieces, and onion cubes into a pot.
  11. 11. Pour 1/8 liter of vinegar over the ingredients.
  12. 12. Place the lid on the pot.
  13. 13. Simmer the mixture with the lid on for about 10 minutes.
  14. 14. Mix the cornstarch with the remaining vinegar in a separate bowl.
  15. 15. Pour the vinegar-cornstarch mixture into a clean pot.
  16. 16. Add the sugar.
  17. 17. Add the mustard.
  18. 18. Grate the lemon zest and add it to the pot.
  19. 19. Add a pinch of salt to the pot.
  20. 20. Add the bay leaves to the pot.
  21. 21. Stir constantly and bring the mixture to a boil.
  22. 22. Let the sauce simmer for 10 minutes.
  23. 23. Stir the cooked gooseberries into the sauce.
  24. 24. Stir the onion-chili mixture into the sauce.
  25. 25. Simmer everything for another 5 minutes while stirring constantly.
  26. 26. Taste the chutney to adjust the flavor.
  27. 27. Immediately fill the hot chutney into clean jars.
  28. 28. Seal the jars tightly immediately.
