🍰 Basic Spritzgebäck Recipe

Ingredients
- 175 g soft butter
- 75 g powdered sugar (from cane sugar)
- 0.25 tsp salt
- 1 vanilla pod (seeds)
- 1 egg white
- 150 g spelt flour
- 50 g ground hazelnuts
- 25 g cornstarch
- 150 g dark chocolate (60% cocoa)
Instructions
- 1. Preheat your oven to 180 degrees Celsius (conventional heat). If using fan-assisted (convection) heat, set it to 160 degrees. For gas ovens, select setting 2 to 3.
- 2. Cream the butter together with the powdered sugar, a pinch of salt, and the vanilla seeds until smooth.
- 3. Add the egg white to the butter mixture and beat everything with a mixer until the mixture becomes airy and foamy.
- 4. In a separate bowl, mix together the spelt flour, the nuts, and the starch.
- 5. Add the flour mixture to the butter mixture and stir it in gently until a uniform dough forms.
- 6. Fill the dough into a piping bag fitted with a star tip.
- 7. Line a baking tray with baking paper.
- 8. Pipe sticks approximately 4 cm long onto the prepared tray.
- 9. Bake the spritzgebäck sticks in the preheated oven for 12 to 15 minutes until golden yellow.
- 10. Remove the tray from the oven and let the cookies cool down completely.
- 11. Chop the chocolate roughly.
- 12. Melt the chocolate pieces over a bowl of hot water (bain-marie).
- 13. Dip half of the cooled sticks into the melted chocolate.
- 14. Place the chocolate-dipped sticks on a wire rack and let the chocolate dry.
