🍽️ Flammcake with Pointed Cabbage and Grapes

Ingredients
- 200 g Savoy cabbage (1 piece)
- 1 onion
- 5 tbsp olive oil
- salt
- pepper
- 0.5 tsp caraway seeds
- 70 g smoked turkey breast (sliced)
- 80 g grapes (red and green)
- 400 g whole wheat flour
- 200 g low-fat quark
Instructions
- 1. Wash the pointed cabbage thoroughly.
- 2. Let the vegetable drain well in a sieve.
- 3. Cut the pointed cabbage into thin strips.
- 4. Remove the tough leaf ribs from the strips.
- 5. Peel the onion.
- 6. Halve the onion.
- 7. Cut the onion halves into thin strips.
- 8. Heat one tablespoon of oil in a coated pan.
- 9. Add the pointed cabbage and onion strips to the pan.
- 10. Sauté the vegetables for three to five minutes over medium heat.
- 11. Season the mixture with salt, pepper, and cumin.
- 12. Remove the pan from the heat and set the filling aside.
- 13. Cut the turkey breast slices into wide strips.
- 14. Wash the grapes thoroughly.
- 15. Dry the grapes well.
- 16. Halve the grapes.
- 17. Put the flour into a bowl.
- 18. Add the remaining four tablespoons of oil.
- 19. Pour 250 milliliters of water into the bowl.
- 20. Add half a teaspoon of salt.
- 21. Process the ingredients using the dough hooks of the hand mixer.
- 22. Knead the dough until it is smooth.
- 23. Place a sheet of baking paper on the work surface.
- 24. Roll out the dough on the baking paper.
- 25. Ensure the dough matches the size of the baking tray.
- 26. Lift the dough along with the baking paper onto the baking tray.
- 27. Spread the quark evenly over the dough base.
- 28. Distribute the sautéed pointed cabbage over the quark.
- 29. Top the flammcake with the turkey strips.
- 30. Distribute the halved grapes on top.
- 31. Preheat the oven to 225 degrees Celsius.
- 32. Place the baking tray on the lowest rack.
- 33. Bake the flammcake for about twelve minutes.
- 34. Remove the flammcake from the oven.
- 35. Lift the baking paper along with the flammcake off the tray.
- 36. Cut the flammcake into eight equal pieces.
