  1. 1. Mound flour, sugar, and vanilla sugar on a clean work surface into a pile.
  2. 2. Make a well in the center of the flour and place the egg inside.
  3. 3. Place the butter pieces around the edge of the flour mound.
  4. 4. Chop the ingredients roughly together until they are mixed.
  5. 5. Knead the mixture quickly into a smooth dough ball.
  6. 6. Wrap the dough in cling film.
  7. 7. Place the dough in the refrigerator for 1 hour.
  8. 8. Preheat the oven to 180 degrees Celsius conventional heat.
  9. 9. Roll out the dough on the work surface to a thickness of approx. 4 millimeters.
  10. 10. Cut out many cookies using a large round cutter.
  11. 11. Cut out a hole from the center of most cookies using a smaller round cutter.
  12. 12. Place all cookies on a greased baking sheet.
  13. 13. Bake the cookies in the center of the oven for approx. 12 minutes until golden yellow.
  14. 14. Warm the apricot jam slightly until it becomes more fluid.
  15. 15. Spread the jam on the underside of the large cookies.
  16. 16. Place the small cookies with the hole facing up onto the large ones.
  17. 17. Dust the finished cookies with powdered sugar.
  18. 18. Let the cookies cool down completely.
