  1. 1. Put flour, butter cubes, sugar, egg, vanilla sugar, lemon zest, and almonds into a bowl.
  2. 2. Quickly mix the ingredients into a smooth dough.
  3. 3. Wrap the dough in cling film.
  4. 4. Let the dough rest in the refrigerator for two hours.
  5. 5. Preheat the oven to 175 degrees Celsius.
  6. 6. Take a portion of dough out of the refrigerator.
  7. 7. Keep the remaining dough cool.
  8. 8. Dust the work surface with flour.
  9. 9. Roll out the dough thinly.
  10. 10. Cut out cookies using a round cutter with a scalloped edge.
  11. 11. Take half of the cookies.
  12. 12. Use a small cutter to punch three holes in the center of each of these cookies.
  13. 13. Place all cookies on a baking sheet.
  14. 14. Bake the cookies for 12 to 14 minutes at 175 degrees until golden brown.
  15. 15. Let the cookies cool down completely.
  16. 16. Put the jelly filling into a small saucepan.
  17. 17. Heat the jelly filling in the saucepan.
  18. 18. Take a cookie without holes.
  19. 19. Place 1 to 2 teaspoons of the warm jelly filling in the center of the cookie.
  20. 20. Take a cookie with holes.
  21. 21. Dust the underside of this cookie with powdered sugar.
  22. 22. Place the sugared cookie with the holes on top of the filled cookie.
