Ingredients
- 350 g flour
- 250 g butter
- 150 g sugar
- 1 egg
- 1 packet vanilla sugar
- 0.5 untreated lemon (zest)
- 100 g almond kernels
- 150 g currant jelly
- powdered sugar
Instructions
- 1. Put flour, butter cubes, sugar, egg, vanilla sugar, lemon zest, and almonds into a bowl.
- 2. Quickly mix the ingredients into a smooth dough.
- 3. Wrap the dough in cling film.
- 4. Let the dough rest in the refrigerator for two hours.
- 5. Preheat the oven to 175 degrees Celsius.
- 6. Take a portion of dough out of the refrigerator.
- 7. Keep the remaining dough cool.
- 8. Dust the work surface with flour.
- 9. Roll out the dough thinly.
- 10. Cut out cookies using a round cutter with a scalloped edge.
- 11. Take half of the cookies.
- 12. Use a small cutter to punch three holes in the center of each of these cookies.
- 13. Place all cookies on a baking sheet.
- 14. Bake the cookies for 12 to 14 minutes at 175 degrees until golden brown.
- 15. Let the cookies cool down completely.
- 16. Put the jelly filling into a small saucepan.
- 17. Heat the jelly filling in the saucepan.
- 18. Take a cookie without holes.
- 19. Place 1 to 2 teaspoons of the warm jelly filling in the center of the cookie.
- 20. Take a cookie with holes.
- 21. Dust the underside of this cookie with powdered sugar.
- 22. Place the sugared cookie with the holes on top of the filled cookie.
