  1. 1. Preheat the oven to 200 degrees Celsius (conventional heat).
  2. 2. Beat the butter together with the powdered sugar until creamy.
  3. 3. Add the egg yolk, vanilla sugar, a pinch of salt, and the lemon zest, then mix everything well.
  4. 4. Add the flour and quickly knead the ingredients into a smooth dough.
  5. 5. Wrap the dough in cling film and place it in the refrigerator for about 60 minutes.
  6. 6. Roll out the dough on a floured surface to a thickness of about 3 millimeters.
  7. 7. Cut out small cookies using a round cutter (about 3 centimeters in diameter).
  8. 8. Take half of the cookies and cut or punch out small letters or shapes from the center.
  9. 9. Place all cookies on a baking sheet and bake them for about 12 minutes until golden brown.
  10. 10. Heat the apricot jam in a small saucepan until it becomes liquid.
  11. 11. Strain the liquid jam through a fine sieve to remove any lumps.
  12. 12. Brush the solid cookies thinly with the strained jam.
  13. 13. Place the cookies with the cutouts on top and press them down slightly.
  14. 14. Allow the jam between the two cookies to dry completely.
  15. 15. Dust the finished Spitzbuben with a little powdered sugar just before serving.
