🍽️ Classic Spitzbuben Cookies

Ingredients
- 150 g Butter
- 75 g powdered sugar
- 1 egg yolk
- 1 packet vanilla sugar
- 1 pinch salt
- 1 tsp lemon zest
- 250 g flour
- 100 g apricot jam
- powdered sugar (for dusting)
Instructions
- 1. Preheat the oven to 200 degrees Celsius (conventional heat).
- 2. Beat the butter together with the powdered sugar until creamy.
- 3. Add the egg yolk, vanilla sugar, a pinch of salt, and the lemon zest, then mix everything well.
- 4. Add the flour and quickly knead the ingredients into a smooth dough.
- 5. Wrap the dough in cling film and place it in the refrigerator for about 60 minutes.
- 6. Roll out the dough on a floured surface to a thickness of about 3 millimeters.
- 7. Cut out small cookies using a round cutter (about 3 centimeters in diameter).
- 8. Take half of the cookies and cut or punch out small letters or shapes from the center.
- 9. Place all cookies on a baking sheet and bake them for about 12 minutes until golden brown.
- 10. Heat the apricot jam in a small saucepan until it becomes liquid.
- 11. Strain the liquid jam through a fine sieve to remove any lumps.
- 12. Brush the solid cookies thinly with the strained jam.
- 13. Place the cookies with the cutouts on top and press them down slightly.
- 14. Allow the jam between the two cookies to dry completely.
- 15. Dust the finished Spitzbuben with a little powdered sugar just before serving.
