🍽️ Classic Spitzbuben Cookies

Ingredients
- 150 g soft butter
- 75 g powdered sugar
- 1 egg yolk
- 1 packet vanilla sugar
- 1 pinch salt
- 1 tsp grated lemon zest
- 250 g flour
- 100 g orange marmalade (with ginger)
- powdered sugar (for dusting)
Instructions
- 1. Preheat your oven to 200 degrees Celsius. Set it to fan mode.
- 2. Soften the butter at room temperature. Beat it with powdered sugar, vanilla sugar, salt, and lemon zest until creamy and smooth.
- 3. Add the egg yolk to the butter mixture and mix it well.
- 4. Sift the flour over the mixture. Knead the dough briefly until it just comes together.
- 5. Wrap the dough in cling film. Place it in the refrigerator for about one hour.
- 6. Take the dough out of the fridge. Roll it out on a floured surface to a thickness of about 3 millimeters.
- 7. Cut out many small cookies using a round cookie cutter (about 3 cm in diameter).
- 8. Take half of the round cookies. Use a small cutter to punch out numbers or letters from the center of each.
- 9. Place all cookies on a baking sheet lined with parchment paper. Bake them in the preheated oven on the middle rack for about 12 minutes until golden brown.
- 10. Heat the apricot jam in a small saucepan until it is liquid. Pass it through a fine sieve to remove any lumps.
- 11. Brush the complete (not cut-out) cookies thinly with the warm jam.
- 12. Place the cookies with the cut-out designs on top of the jam-covered cookies. Press them down slightly.
- 13. Let the cookies cool completely so that the jam sets.
- 14. Lightly dust the finished Spitzbuben with powdered sugar before serving.
