🍽️ Creamy Spinach Soup with Parmesan

Ingredients
- 1 onion
- 1 garlic clove
- 400 g spinach
- 1 head romaine lettuce
- 2 tbsp olive oil
- 1 tbsp flour
- 250 g dry white wine
- 300 ml vegetable broth
- 150 g whipping cream
- salt
- pepper (from the mill)
- nutmeg
- 100 g parmesan
Instructions
- 1. Peel the onion and garlic and chop both ingredients very finely.
- 2. Wash the spinach thoroughly and let it drain well.
- 3. Separate the lettuce hearts into individual leaves, wash them, and dry them in a salad spinner.
- 4. Cut the dried lettuce leaves into bite-sized pieces.
- 5. Heat oil in a pot and sauté the onions and garlic until translucent.
- 6. Dust the vegetables with flour and stir briefly.
- 7. Deglaze with wine, then add broth and cream, stirring everything well.
- 8. Let the soup simmer quietly for 10 minutes.
- 9. Season the soup with salt, pepper, and ground nutmeg.
- 10. Add the spinach to the soup and let it wilt.
- 11. Grate the Parmesan finely.
- 12. Stir half of the grated Parmesan into the finished soup.
- 13. Fill the soup into pre-warmed bowls.
- 14. Sprinkle the prepared lettuce pieces over the soup.
- 15. Distribute the remaining Parmesan on top and serve the dish immediately.
