  1. 1. Peel the onion and garlic and chop both ingredients very finely.
  2. 2. Wash the spinach thoroughly and let it drain well.
  3. 3. Separate the lettuce hearts into individual leaves, wash them, and dry them in a salad spinner.
  4. 4. Cut the dried lettuce leaves into bite-sized pieces.
  5. 5. Heat oil in a pot and sauté the onions and garlic until translucent.
  6. 6. Dust the vegetables with flour and stir briefly.
  7. 7. Deglaze with wine, then add broth and cream, stirring everything well.
  8. 8. Let the soup simmer quietly for 10 minutes.
  9. 9. Season the soup with salt, pepper, and ground nutmeg.
  10. 10. Add the spinach to the soup and let it wilt.
  11. 11. Grate the Parmesan finely.
  12. 12. Stir half of the grated Parmesan into the finished soup.
  13. 13. Fill the soup into pre-warmed bowls.
  14. 14. Sprinkle the prepared lettuce pieces over the soup.
  15. 15. Distribute the remaining Parmesan on top and serve the dish immediately.
