  2. 2. Remove woody stems and wilted leaves.
  3. 3. Dry the spinach well or spin it gently.
  4. 4. Peel the orange completely with a sharp knife.
  5. 5. Also remove the white bitter pith.
  6. 6. Cut the fruit flesh segments out of the membranes.
  7. 7. Catch the released orange juice in a bowl.
  8. 8. Squeeze the juice from the remaining orange peels.
  9. 9. Take two tablespoons of the collected orange juice.
  10. 10. Mix this juice with lemon juice and sugar.
  11. 11. Season the mixture with salt and pepper.
  12. 12. Stir in a spoonful of mustard.
  13. 13. Whisk everything well until it is a homogeneous sauce.
  14. 14. Slowly stir in the olive oil.
  15. 15. Use two-thirds of the marinade for the spinach.
  16. 16. Toss the spinach in the marinade.
  17. 17. Distribute the salad onto the plates.
  18. 18. Place the orange segments on top.
  19. 19. Crumble the cream cheese over it.
  20. 20. Drizzle the salad with the remaining marinade.
  21. 21. Sprinkle sesame seeds over it.
  22. 22. Serve the salad immediately.
