🍽️ Fresh Spinach and Orange Salad with Cream Cheese

Ingredients
- 400 g spinach
- 125 g dry goat cream cheese (or feta)
- 1 orange
- 1 tbsp sesame seeds
- 2 tbsp lemon juice
- 1 tsp sugar
- 1 tsp salt
- 1 pinch pepper
- 0.5 tsp mustard
- 3 tbsp olive oil
Instructions
- 1. Wash the spinach thoroughly.
- 2. Remove woody stems and wilted leaves.
- 3. Dry the spinach well or spin it gently.
- 4. Peel the orange completely with a sharp knife.
- 5. Also remove the white bitter pith.
- 6. Cut the fruit flesh segments out of the membranes.
- 7. Catch the released orange juice in a bowl.
- 8. Squeeze the juice from the remaining orange peels.
- 9. Take two tablespoons of the collected orange juice.
- 10. Mix this juice with lemon juice and sugar.
- 11. Season the mixture with salt and pepper.
- 12. Stir in a spoonful of mustard.
- 13. Whisk everything well until it is a homogeneous sauce.
- 14. Slowly stir in the olive oil.
- 15. Use two-thirds of the marinade for the spinach.
- 16. Toss the spinach in the marinade.
- 17. Distribute the salad onto the plates.
- 18. Place the orange segments on top.
- 19. Crumble the cream cheese over it.
- 20. Drizzle the salad with the remaining marinade.
- 21. Sprinkle sesame seeds over it.
- 22. Serve the salad immediately.
