🍽️ Fresh spinach salad with pan-fried chicken and orange dressing

Ingredients
- 300 g spinach
- 4 chicken breast fillets
- 1 onion
- 2 oranges
- 2 tbsp oil
- 20 g butter
- 3 tbsp olive oil
- 3 tbsp raspberry vinegar
- salt
- pepper
Instructions
- 1. Wash the spinach thoroughly and shake it dry.
- 2. Cut the chicken breast into small, bite-sized pieces.
- 3. Heat oil and butter in a frying pan.
- 4. Fry the chicken pieces until golden brown.
- 5. Peel the oranges and remove the flesh in whole segments.
- 6. Catch the draining orange juice in a container.
- 7. Cut the orange segments into smaller pieces.
- 8. Whisk olive oil, raspberry vinegar, and three tablespoons of orange juice together to make a sauce.
- 9. Season the sauce with salt and pepper to taste.
- 10. Peel the onion and slice it into thin rings.
- 11. Place the spinach, oranges, onions, and chicken into a large bowl.
- 12. Gently toss the ingredients with the dressing.
