🍽️ Spinach Salad with Fried Apples and Pine Nuts

Ingredients
- 400 g young spinach
- 60 g raisins
- 40 ml sherry (sweet)
- 3 apples
- 40 g pine nuts
- 4 tbsp olive oil
- sea salt
- 3 lemon juice
- pepper (from the mill)
Instructions
- 1. Wash the spinach thoroughly and remove any tough stems. Let the spinach drain well.
- 2. Rinse the raisins and let them soak in sherry.
- 3. Wash the apples, cut them into quarters, and remove the core.
- 4. Cut the apple pieces into bite-sized chunks.
- 5. Heat two tablespoons of oil in a frying pan.
- 6. Fry the apple pieces together with the pine nuts in the hot oil for three to four minutes until lightly golden brown.
- 7. Remove the pan from the heat.
- 8. Add the drained spinach, the remaining oil, and the drained raisins (including the sherry) to the apple and pine nut mixture.
- 9. Season the salad with salt, lemon juice, and pepper to taste.
- 10. Serve the salad immediately.
