  1. 1. Wash the spinach thoroughly and remove any tough stems. Let the spinach drain well.
  2. 2. Rinse the raisins and let them soak in sherry.
  3. 3. Wash the apples, cut them into quarters, and remove the core.
  4. 4. Cut the apple pieces into bite-sized chunks.
  5. 5. Heat two tablespoons of oil in a frying pan.
  6. 6. Fry the apple pieces together with the pine nuts in the hot oil for three to four minutes until lightly golden brown.
  7. 7. Remove the pan from the heat.
  8. 8. Add the drained spinach, the remaining oil, and the drained raisins (including the sherry) to the apple and pine nut mixture.
  9. 9. Season the salad with salt, lemon juice, and pepper to taste.
  10. 10. Serve the salad immediately.
