🍽️ Fresh spinach salad with grilled prawns

Ingredients
- 100 g spinach
- 50 g feta cheese
- 2 tbsp chickpeas (jar)
- salt
- pepper from the mill
- 0.5 tsp mustard
- 1 pinch sugar
- 1 tbsp vinegar
- 2 tbsp olive oil
- 8 large shrimp (ready to cook)
- 2 garlic cloves
- 2 chili peppers
- 4 tbsp olive oil
- juice of 1 lemons
Instructions
- 1. Rinse the prawns thoroughly under cold water.
- 2. Slice the prawns lengthwise and remove the dark vein.
- 3. Peel the garlic clove and finely chop it together with the chili peppers.
- 4. Mix the garlic-chili mixture with the lemon juice and olive oil to create a marinade.
- 5. Pour the marinade over the prawns and let them marinate for 30 minutes.
- 6. Cook the prawns on the grill for about 5 to 8 minutes.
- 7. Remove any wilted or damaged leaves from the spinach.
- 8. Wash the spinach thoroughly and spin it dry.
- 9. Crumble the feta cheese roughly with a fork.
- 10. Drain the chickpeas well in a sieve.
- 11. Whisk mustard, salt, sugar, pepper, and vinegar together in a small bowl.
- 12. Slowly stir the oil into the dressing mixture until it is creamy.
- 13. Toss the dressing with the spinach, chickpeas, and feta.
- 14. Plate the salad and place the grilled prawns on top.
