🍽️ Fruity Spinach and Arugula Salad with Mozzarella

Ingredients
- 3 handfuls strawberry spinach (with berries)
- 2 handfuls arugula
- 250 g mozzarella
- 5 sprigs thyme
- 2 sprigs basil
- 2 tbsp balsamic vinegar
- 2 tbsp lemon juice
- 4 tbsp olive oil
- 1 pinch sugar
- salt
- pepper (from the mill)
Instructions
- 1. Carefully remove the berries from the stems and sort them out.
- 2. Rinse the stems under running water, shake them dry, and pluck off the leaves.
- 3. Also rinse the arugula, shake it dry, and tear the leaves into smaller pieces if necessary.
- 4. Mix the washed strawberry spinach with the arugula and arrange the mixture on the plates.
- 5. Let the mozzarella drain well and slice it into thin rounds.
- 6. Place the mozzarella slices decoratively on top of the salad.
- 7. Rinse the thyme and basil, shake them dry, and pluck off the leaves.
- 8. Sprinkle the fresh herbs and the previously prepared berries over the salad.
- 9. Whisk the balsamic vinegar, lemon juice, oil, sugar, salt, and pepper together in a small bowl to make a dressing.
- 10. Finally, adjust the seasoning of the sauce with salt and pepper.
- 11. Drizzle the finished dressing evenly over the salad.
- 12. Serve the salad immediately.
- 13. Serve fresh white bread on the side if desired.
