  2. 2. Add about 50 milliliters of water and knead everything into a smooth dough.

  4. 4. Wrap the dough ball tightly in cling film.
  5. 5. Store the dough in the refrigerator for 30 minutes.
  6. 6. Peel the shallots and the garlic.
  7. 7. Dice the shallots and garlic finely.
  8. 8. Wash the spinach thoroughly under running water.
  9. 9. Remove thick stems or wilted leaves from the spinach.
  10. 10. Spin the spinach dry in a salad spinner.
  11. 11. Chop the dry spinach into coarse pieces.
  12. 12. Heat some butter in a large pan.
  13. 13. Add the diced shallots and garlic to the pan.
  14. 14. Sauté the vegetables for about 10 minutes.
  15. 15. Add the chopped spinach to the pan.
  16. 16. Continue to sauté the spinach for the remaining time.
  17. 17. Stir in the pine nuts and thyme.
  18. 18. Season the filling with salt and pepper.
  19. 19. Mix the egg yolks with the milk in a bowl.
  20. 20. Add the cream to the egg yolk and milk mixture.

  43. 43. Put the pie into the preheated oven.
  44. 44. Bake the pie for 50 to 60 minutes.
