🍽️ Crunchy Spinach Pie with Egg

Ingredients
- 400 g flour
- 200 g butter
- 1 pinch salt
- pepper
- 900 g spinach
- 2 tsp thyme leaves
- 2 shallots
- 50 g pine nuts
- 2 tbsp butter
- 100 ml milk
- 100 ml whipping cream
- 2 egg yolks
- 1 tbsp flour
- 4 tbsp Parmesan (freshly grated)
- salt
- pepper (from the mill)
- 4 eggs
- oil (for the pan)
Instructions
- 1. Mix flour, butter, salt, and pepper in a bowl.
- 2. Add about 50 milliliters of water and knead everything into a smooth dough.
- 3. Shape the dough into a ball.
- 4. Wrap the dough ball tightly in cling film.
- 5. Store the dough in the refrigerator for 30 minutes.
- 6. Peel the shallots and the garlic.
- 7. Dice the shallots and garlic finely.
- 8. Wash the spinach thoroughly under running water.
- 9. Remove thick stems or wilted leaves from the spinach.
- 10. Spin the spinach dry in a salad spinner.
- 11. Chop the dry spinach into coarse pieces.
- 12. Heat some butter in a large pan.
- 13. Add the diced shallots and garlic to the pan.
- 14. Sauté the vegetables for about 10 minutes.
- 15. Add the chopped spinach to the pan.
- 16. Continue to sauté the spinach for the remaining time.
- 17. Stir in the pine nuts and thyme.
- 18. Season the filling with salt and pepper.
- 19. Mix the egg yolks with the milk in a bowl.
- 20. Add the cream to the egg yolk and milk mixture.
- 21. Stir in the flour until dissolved.
- 22. Fold in the grated parmesan.
- 23. Season the liquid with salt and pepper.
- 24. Brush a springform pan with some oil.
- 25. Peel the boiled eggs.
- 26. Cut the eggs in half lengthwise.
- 27. Preheat the oven to 200 degrees.
- 28. Sprinkle some flour on your work surface.
- 29. Take two-thirds of the chilled dough.
- 30. Roll out the dough into a circle.
- 31. Ensure the dough circle is slightly larger than the pan.
- 32. Place the dough into the springform pan.
- 33. Press the dough into the bottom and sides of the pan.
- 34. Add half of the warm spinach filling to the dough base.
- 35. Place the halved eggs on top of the spinach.
- 36. Spread the remaining spinach over the eggs.
- 37. Pour the egg cream liquid evenly over everything.
- 38. Roll out the remaining dough on the floured surface.
- 39. Place the dough lid on the filled pan.
- 40. Press the edges of the lid and base together firmly.
- 41. Cut a hole in the center of the lid.
- 42. The hole should be about the size of a 1-euro coin.
- 43. Put the pie into the preheated oven.
- 44. Bake the pie for 50 to 60 minutes.
- 45. Take the pie out when it is golden brown.
