  1. 1. Let the pastry thaw and line a greased quiche pan with it.
  2. 2. Wash the spinach thoroughly, prep it, and chop it coarsely.
  3. 3. Sweat the shallot and garlic in hot butter, then add the spinach. Cook everything until all the liquid has evaporated. Remove from the heat.
  4. 4. Mix the quark, crème fraîche, and feta cheese well, then stir in the cream and eggs. Season generously with salt, pepper, and nutmeg.
  5. 5. Distribute the spinach and olives evenly over the pastry. Pour the cheese mixture on top and bake in a preheated oven at 180°C fan-forced for about 35-40 minutes until golden brown.
