🍽️ Spinach Quiche

Ingredients
- 1 Yufka pastry (frozen)
- 200 g spinach
- 1 shallot (diced)
- 1 garlic clove (finely chopped)
- 1 tbsp butter
- 100 g black olives (pitted)
- 100 g quark
- 2 tbsp crème fraîche
- 200 g feta cheese
- 200 ml whipping cream
- 2 eggs
- salt
- pepper (from the mill)
- nutmeg (ground)
- butter (for the pan)
Instructions
- 1. Let the pastry thaw and line a greased quiche pan with it.
- 2. Wash the spinach thoroughly, prep it, and chop it coarsely.
- 3. Sweat the shallot and garlic in hot butter, then add the spinach. Cook everything until all the liquid has evaporated. Remove from the heat.
- 4. Mix the quark, crème fraîche, and feta cheese well, then stir in the cream and eggs. Season generously with salt, pepper, and nutmeg.
- 5. Distribute the spinach and olives evenly over the pastry. Pour the cheese mixture on top and bake in a preheated oven at 180°C fan-forced for about 35-40 minutes until golden brown.
