  1. 1. Rinse the spinach carefully under running water.
  2. 2. Dip the spinach into boiling salted water for 10 seconds (this is called blanching).
  3. 3. Remove the spinach immediately from the water and place it on a kitchen towel to drain and cool.
  4. 4. Soak the bread roll in some lukewarm water.
  5. 5. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  6. 6. Peel the shallot and chop it very finely.
  7. 7. Squeeze the soaked bread roll well so that only little moisture remains.
  8. 8. Mix the squeezed bread roll, the chopped shallot, and the egg with the minced meat.
  9. 9. If the meat mixture seems too soft, knead in some breadcrumbs.
  10. 10. Season the meat mixture with salt, pepper, and mustard.
  11. 11. Cut the feta cheese into small cubes.
  12. 12. Gently fold the feta cubes into the meat mixture.
  13. 13. Lay several spinach leaves slightly overlapping on a work surface to create a large sheet.
  14. 14. Place a spoonful of the meat and feta mixture in the center of the spinach leaves.
  15. 15. Wrap the spinach leaves around the filling to form a firm ball.
  16. 16. Place the parcels seam-side down in a greased baking dish.
  17. 17. Pour wine and broth into the dish.
  18. 18. Cook the parcels in the preheated oven for 30 to 40 minutes.
  19. 19. Cover the parcels with aluminum foil if they are browning too much.
  20. 20. Roast the sliced almonds in a non-stick pan without fat until golden brown while the parcels are cooking.
  21. 21. Remove the almonds from the pan and let them cool.
  22. 22. Sprinkle the finished parcels with a little pepper.
  23. 23. Serve the parcels garnished with the roasted almonds.
