🍽️ Meat and Spinach Parcels with Feta and Roasted Almonds

Ingredients
- 250 g spinach (preferably large leaves, or chard)
- salt
- 1 stale roll
- 1 shallot
- 1 egg
- 400 g minced meat (e.g. veal or turkey)
- breadcrumbs (as needed)
- pepper (from the mill)
- 1 tsp medium-hot mustard
- 100 g feta cheese
- butter (for the dish)
- 80 ml white wine
- 120 ml vegetable broth
- 4 tbsp sliced almonds
Instructions
- 1. Rinse the spinach carefully under running water.
- 2. Dip the spinach into boiling salted water for 10 seconds (this is called blanching).
- 3. Remove the spinach immediately from the water and place it on a kitchen towel to drain and cool.
- 4. Soak the bread roll in some lukewarm water.
- 5. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 6. Peel the shallot and chop it very finely.
- 7. Squeeze the soaked bread roll well so that only little moisture remains.
- 8. Mix the squeezed bread roll, the chopped shallot, and the egg with the minced meat.
- 9. If the meat mixture seems too soft, knead in some breadcrumbs.
- 10. Season the meat mixture with salt, pepper, and mustard.
- 11. Cut the feta cheese into small cubes.
- 12. Gently fold the feta cubes into the meat mixture.
- 13. Lay several spinach leaves slightly overlapping on a work surface to create a large sheet.
- 14. Place a spoonful of the meat and feta mixture in the center of the spinach leaves.
- 15. Wrap the spinach leaves around the filling to form a firm ball.
- 16. Place the parcels seam-side down in a greased baking dish.
- 17. Pour wine and broth into the dish.
- 18. Cook the parcels in the preheated oven for 30 to 40 minutes.
- 19. Cover the parcels with aluminum foil if they are browning too much.
- 20. Roast the sliced almonds in a non-stick pan without fat until golden brown while the parcels are cooking.
- 21. Remove the almonds from the pan and let them cool.
- 22. Sprinkle the finished parcels with a little pepper.
- 23. Serve the parcels garnished with the roasted almonds.
