🍽️ Spinach Pasta with Fried Tuna

Ingredients
- 125 g spinach leaves
- 200 g flour
- 2 tbsp semolina
- 3 eggs
- 3 tbsp olive oil
- salt
- pepper (from the mill)
- 3 tomatoes
- 0.5 bunch basil
- 4 tbsp grated parmesan
- 4 slices tuna fillet (approx. 160 g each)
- 2 tbsp lemon juice
Instructions
- 1. Wash the spinach thoroughly, pick through the leaves, and wilt them in a pot. Then drain and shock with cold water. Squeeze well and then puree with an immersion blender.
- 2. Mix the pureed spinach with flour, semolina, eggs, one tablespoon of oil, salt, and pepper, and knead into a dough. Add a little more flour if needed, and let the dough rest for about one hour.
- 3. Blanch the tomatoes briefly, peel off the skin, quarter them, remove the seeds, and cut into small pieces.
- 4. Cut the basil leaves into thin strips.
- 5. Roll out the dough thinly on a floured work surface or process with a pasta machine. Cut into strips and cook these in a large pot of boiling salted water for 3 to 4 minutes until al dente. Then drain, let drip dry, and mix with the tomatoes and basil.
- 6. Meanwhile, drizzle the tuna with lemon juice, season with salt and pepper, and fry in the remaining oil for about 2 to 3 minutes per side.
- 7. Serve the noodles together with the tuna on plates and sprinkle with parmesan to taste.
