  1. 1. Wash the spinach thoroughly, pick through the leaves, and wilt them in a pot. Then drain and shock with cold water. Squeeze well and then puree with an immersion blender.
  2. 2. Mix the pureed spinach with flour, semolina, eggs, one tablespoon of oil, salt, and pepper, and knead into a dough. Add a little more flour if needed, and let the dough rest for about one hour.
  3. 3. Blanch the tomatoes briefly, peel off the skin, quarter them, remove the seeds, and cut into small pieces.
  4. 4. Cut the basil leaves into thin strips.
  5. 5. Roll out the dough thinly on a floured work surface or process with a pasta machine. Cut into strips and cook these in a large pot of boiling salted water for 3 to 4 minutes until al dente. Then drain, let drip dry, and mix with the tomatoes and basil.
  6. 6. Meanwhile, drizzle the tuna with lemon juice, season with salt and pepper, and fry in the remaining oil for about 2 to 3 minutes per side.
  7. 7. Serve the noodles together with the tuna on plates and sprinkle with parmesan to taste.
