🍽️ Crispy Spinach Dumplings with Butter Sauce

Ingredients
- 500 g Bread for dumplings
- 400 ml Milk
- 300 g Spinach
- 1 Shallot
- 1 tbsp Butter
- 2 Eggs
- 1 handful fresh chopped parsley
- Salt
- Nutmeg
- Pepper (from the mill)
- Breadcrumbs (as needed)
- 60 g Butter
- 80 g Parmesan
Instructions
- 1. Crumble the bread dumpling base into a large bowl.
- 2. Bring the milk to a boil in a pot.
- 3. Pour the hot milk over the bread.
- 4. Let the mixture soak for a few minutes.
- 5. Wash the spinach thoroughly.
- 6. Remove the tough stems from the spinach.
- 7. Chop the spinach into coarse pieces.
- 8. Peel the shallot.
- 9. Dice the shallot finely.
- 10. Heat some butter in a frying pan.
- 11. Sauté the shallot cubes until translucent.
- 12. Add the chopped spinach to the pan.
- 13. Let the spinach wilt.
- 14. Cook off all excess liquid completely.
- 15. Remove the pan from the heat.
- 16. Add the eggs to the soaked mixture.
- 17. Finely chop the parsley.
- 18. Add the parsley to the soaked mixture.
- 19. Season with salt.
- 20. Season with pepper.
- 21. Grate some nutmeg into the mixture.
- 22. Mix all ingredients thoroughly together.
- 23. Let the mixture rest for about 10 minutes.
- 24. Fold the cooled spinach into the mixture.
- 25. Check the consistency of the mixture.
- 26. If necessary, add a little milk.
- 27. If necessary, add some breadcrumbs.
- 28. Taste the mixture again and adjust seasoning.
- 29. Wet your hands with water.
- 30. Shape 12 small dumplings from the mixture.
- 31. Fill a large pot with water.
- 32. Salt the water generously.
- 33. Bring the water to a boil.
- 34. Cook the dumplings for about 15 minutes.
- 35. Melt the butter in a small saucepan.
- 36. Use moderate heat for this.
- 37. Remove the cooked dumplings with a slotted spoon.
- 38. Let the dumplings drain briefly.
- 39. Plate the dumplings.
- 40. Pour the melted butter over the dumplings.
- 41. Grate fresh parmesan over them.
- 42. Serve the dumplings immediately.
