🍽️ Crispy Spinach Dumplings with Melted Parmesan Butter

Ingredients
- 400 g Bread for dumplings
- 180 ml Milk
- 150 g fresh spinach leaves
- 1 Onion
- 1 tbsp Vegetable oil
- Salt
- Pepper (from the mill)
- Nutmeg (freshly grated)
- 2 Eggs
- 60 g freshly grated Parmesan
- Breadcrumbs (as needed)
- 80 g Butter
Instructions
- 1. Crumble the bread dumplings into a large bowl.
- 2. Bring the milk to a boil.
- 3. Pour the hot milk over the bread.
- 4. Let the mixture soak for about 15 minutes.
- 5. Wash the spinach thoroughly.
- 6. Remove tough stems and damaged leaves.
- 7. Spin the spinach dry.
- 8. Finely chop the spinach.
- 9. Peel the onion.
- 10. Finely chop the onion.
- 11. Heat oil in a pot.
- 12. Sauté the onions until translucent.
- 13. Add the chopped spinach to the pot.
- 14. Let the spinach wilt.
- 15. Remove the pot from the heat.
- 16. Add the spinach and onion mixture to the soaked bread.
- 17. Season the mixture with salt.
- 18. Season the mixture with pepper.
- 19. Season the mixture with nutmeg.
- 20. Beat the eggs into the mixture.
- 21. Sprinkle in 40 g of grated Parmesan.
- 22. Knead everything well with your hands.
- 23. If necessary, add more breadcrumbs.
- 24. Ensure the mixture is moldable.
- 25. Bring plenty of salted water to a boil in a pot.
- 26. Wet your hands.
- 27. Shape dumplings from the mixture.
- 28. Carefully add the dumplings to the boiling water.
- 29. Reduce the heat.
- 30. Simmer the dumplings for about 20 minutes.
- 31. Melt the butter in a small pot.
- 32. Remove the dumplings with a slotted spoon.
- 33. Let the dumplings drain.
- 34. Arrange the dumplings on plates.
- 35. Drizzle the dumplings with the melted butter.
- 36. Sprinkle the dumplings with freshly grated Parmesan.
- 37. Serve the dumplings immediately.
