  1. 1. Wash the spinach thoroughly and remove any tough stems. Let the vegetable drain well afterwards.
  2. 2. Peel the onion and the garlic. Chop both ingredients very finely.
  3. 3. Heat some oil in a pan. Fry the onions and garlic in it until they are soft and translucent.
  4. 4. Add the drained spinach to the pan. Stir until the spinach has wilted.
  5. 5. Let the remaining liquid evaporate from the spinach. Season the mixture with salt and a pinch of nutmeg.
  6. 6. Divide the seasoned spinach mixture evenly among four small ovenproof ramekins (each approx. 12 cm in diameter).
  7. 7. Whisk the milk with the crème fraîche, the eggs, and the grated cheese in a bowl.
  8. 8. Season the cheese-milk mixture with salt and black pepper.
  9. 9. Pour the liquid evenly over the spinach in the ramekins.
  10. 10. Sprinkle the sliced almonds evenly over the surface.
  11. 11. Preheat the oven to 220 °C (fan: 200 °C; gas: setting 3–4).
  12. 12. Bake the gratins in the preheated oven for 10 to 15 minutes, until the surface is golden brown and crispy.
  13. 13. Sprinkle the finished gratins with ground pink pepper just before serving.
