🍽️ Crunchy Spinach and Cheese Gratin with Almonds

Ingredients
- 600 g spinach
- 1 onion
- 1 clove garlic
- 2 tbsp olive oil
- salt
- nutmeg
- 100 ml milk (3.5% fat)
- 50 g crème fraîche
- 2 eggs
- 40 g grated cheese (e.g. Emmental)
- pepper (from the mill)
- 2 tbsp sliced almonds
- pink pepper (for garnish)
Instructions
- 1. Wash the spinach thoroughly and remove any tough stems. Let the vegetable drain well afterwards.
- 2. Peel the onion and the garlic. Chop both ingredients very finely.
- 3. Heat some oil in a pan. Fry the onions and garlic in it until they are soft and translucent.
- 4. Add the drained spinach to the pan. Stir until the spinach has wilted.
- 5. Let the remaining liquid evaporate from the spinach. Season the mixture with salt and a pinch of nutmeg.
- 6. Divide the seasoned spinach mixture evenly among four small ovenproof ramekins (each approx. 12 cm in diameter).
- 7. Whisk the milk with the crème fraîche, the eggs, and the grated cheese in a bowl.
- 8. Season the cheese-milk mixture with salt and black pepper.
- 9. Pour the liquid evenly over the spinach in the ramekins.
- 10. Sprinkle the sliced almonds evenly over the surface.
- 11. Preheat the oven to 220 °C (fan: 200 °C; gas: setting 3–4).
- 12. Bake the gratins in the preheated oven for 10 to 15 minutes, until the surface is golden brown and crispy.
- 13. Sprinkle the finished gratins with ground pink pepper just before serving.
