Ingredients
- 1 kg fresh young leaf spinach
- Salt
- 1 clove garlic
- 50 g Butter
- Pepper (from the mill)
- Nutmeg
Instructions
- 1. Wash the spinach thoroughly.
- 2. Remove all tough stems and damaged leaves.
- 3. Bring a pot of water and salt to a boil.
- 4. Add the spinach to the boiling water.
- 5. Heat the spinach briefly until it wilts.
- 6. Remove the spinach from the water using a slotted spoon.
- 7. Shock the spinach immediately under cold water.
- 8. Squeeze the spinach well to remove excess liquid.
- 9. Peel the garlic cloves.
- 10. Finely chop the garlic.
- 11. Heat half of the butter in a hot pan.
- 12. Sauté the garlic briefly until fragrant.
- 13. Add the squeezed spinach to the pan.
- 14. Sauté the spinach briefly with the garlic.
- 15. Season the mixture with salt.
- 16. Season the mixture with pepper.
- 17. Season the mixture with a pinch of nutmeg.
- 18. Place the spinach on a plate.
- 19. Cut the remaining butter into small cubes.
- 20. Garnish the spinach with the butter cubes.
- 21. Serve the dish immediately.
