  7. 7. Let the spinach wilt until it has collapsed.
  8. 8. Pour in 1/4 liter of broth.
  9. 9. Heat the mixture until it is warm.
  10. 10. Puree the soup in a blender until it is fine and smooth.
  11. 11. Pour the pureed soup back into the pot.
  12. 12. Pour in the remaining broth.
  13. 13. Let the soup come to a boil once.
  14. 14. Season the soup with salt, pepper, and coriander.
  15. 15. Stir the crème fraîche into the soup.
  16. 16. Clean the mushrooms and slice them into thin slices.
  17. 17. Drizzle the mushroom slices immediately with lemon juice.
  18. 18. Distribute the hot soup onto plates.
  19. 19. Garnish the soup with the prepared mushrooms.
