🍽️ Creamy Spinach Soup with Mushrooms

Ingredients
- 1 kg spinach
- 1 onion
- 1 tbsp vegetable oil
- 0.5 l vegetable broth
- 100 g sour cream
- lemon juice
- 250 g mushrooms (or small mushrooms)
- salt (pepper)
- ground coriander
Instructions
- 1. Wash the spinach and remove any tough stems.
- 2. Chop the spinach into coarse pieces.
- 3. Peel the onion and cut it into fine cubes.
- 4. Heat the oil in a large pot.
- 5. Sauté the onion cubes in the hot oil until they are soft.
- 6. Add the chopped spinach to the pot.
- 7. Let the spinach wilt until it has collapsed.
- 8. Pour in 1/4 liter of broth.
- 9. Heat the mixture until it is warm.
- 10. Puree the soup in a blender until it is fine and smooth.
- 11. Pour the pureed soup back into the pot.
- 12. Pour in the remaining broth.
- 13. Let the soup come to a boil once.
- 14. Season the soup with salt, pepper, and coriander.
- 15. Stir the crème fraîche into the soup.
- 16. Clean the mushrooms and slice them into thin slices.
- 17. Drizzle the mushroom slices immediately with lemon juice.
- 18. Distribute the hot soup onto plates.
- 19. Garnish the soup with the prepared mushrooms.
