🍽️ Crispy Spinach Balls with Creamy Yogurt Dip

Ingredients
- 600 g spinach
- 20 g parsley
- 50 g pistachios
- 50 g quark
- 3 tbsp olive oil
- 75 g parmesan
- 100 g yogurt
- 4 tbsp mayonnaise
- salt
- cayenne pepper
- pink pepper
Instructions
- 1. Wash the spinach thoroughly and remove any tough stems.
- 2. Bring a pot of salted water to a boil.
- 3. Put the spinach into the boiling water for a short time (this is called blanching).
- 4. Remove the spinach from the water and immediately place it in cold water to stop the cooking process (this is called shocking).
- 5. Squeeze the spinach very well to remove excess water.
- 6. Chop the spinach roughly.
- 7. Pick the parsley leaves off the stems.
- 8. Put the chopped spinach, the parsley, the pistachios, the quark, and the olive oil into a blender.
- 9. Blend the mixture until it is smooth.
- 10. Stir in as much Parmesan as needed until you can shape the mixture well.
- 11. Season the mixture with salt.
- 12. Form small balls from the mixture.
- 13. Thread the balls onto skewers.
- 14. Put the yogurt and the mayonnaise into a bowl.
- 15. Stir the two ingredients until smooth.
- 16. Season the sauce with salt and cayenne pepper.
- 17. Serve the skewers together with the yogurt sauce.
