  1. 1. Wash the spinach thoroughly and remove any tough stems.
  2. 2. Bring a pot of salted water to a boil.
  3. 3. Put the spinach into the boiling water for a short time (this is called blanching).
  4. 4. Remove the spinach from the water and immediately place it in cold water to stop the cooking process (this is called shocking).
  5. 5. Squeeze the spinach very well to remove excess water.
  6. 6. Chop the spinach roughly.
  7. 7. Pick the parsley leaves off the stems.
  8. 8. Put the chopped spinach, the parsley, the pistachios, the quark, and the olive oil into a blender.
  9. 9. Blend the mixture until it is smooth.
  10. 10. Stir in as much Parmesan as needed until you can shape the mixture well.
  11. 11. Season the mixture with salt.
  12. 12. Form small balls from the mixture.
  13. 13. Thread the balls onto skewers.
  14. 14. Put the yogurt and the mayonnaise into a bowl.
  15. 15. Stir the two ingredients until smooth.
  16. 16. Season the sauce with salt and cayenne pepper.
  17. 17. Serve the skewers together with the yogurt sauce.
