  3. 3. Drain the pasta and rinse it immediately with cold water to stop the cooking process.
  4. 4. Let the water drain off well.
  5. 5. Drizzle the sheets with one tablespoon of olive oil.
  6. 6. Use a fork to separate the sheets slightly so they do not stick together.
  7. 7. Thoroughly wash the fresh spinach under running water.
  8. 8. Spin the leaves dry or pat them with a kitchen towel.
  9. 9. Bring a new pot of salted water to a boil.
  10. 10. Add the spinach to the boiling water for exactly one minute.
  11. 11. This short cooking process is called blanching.
  12. 12. Drain the spinach and rinse it immediately with cold water.
  13. 13. Squeeze the spinach firmly with your hands to remove as much water as possible.
  14. 14. Roughly chop the squeezed spinach.
  15. 15. Peel the garlic cloves.
  16. 16. Mince the garlic very finely.
  17. 17. Add the minced garlic to a bowl with the chopped spinach.
  18. 18. Add one tablespoon of olive oil.
  19. 19. Mix everything well together.
  20. 20. Season the mixture with salt.
  21. 21. Grate fresh nutmeg over it.
  22. 22. Wash the basil sprigs.
  23. 23. Shake them dry to remove the water.
  24. 24. Finely chop the basil leaves.
  25. 25. Add the chopped tomatoes to a separate bowl.
  26. 26. Mix the tomatoes with the chopped basil.
  27. 27. Season the tomato mixture with salt.

  41. 41. If your oven has a fan setting, set it to 180 degrees Celsius.
