🍝 Creamy Lasagna with Spinach and Tomatoes

Ingredients
- 9 whole grain lasagna sheets
- salt
- 3 tbsp olive oil
- 800 g spinach
- 2 garlic cloves
- nutmeg
- 2 sprigs basil
- 400 g chopped tomatoes (can)
- 1 pinch sugar
- cayenne pepper
- 125 g mozzarella
- 30 g parmesan (1 piece)
Instructions
- 1. Bring a large pot of water and salt to a boil.
- 2. Cook the lasagna sheets in the water according to the package instructions until al dente.
- 3. Drain the pasta and rinse it immediately with cold water to stop the cooking process.
- 4. Let the water drain off well.
- 5. Drizzle the sheets with one tablespoon of olive oil.
- 6. Use a fork to separate the sheets slightly so they do not stick together.
- 7. Thoroughly wash the fresh spinach under running water.
- 8. Spin the leaves dry or pat them with a kitchen towel.
- 9. Bring a new pot of salted water to a boil.
- 10. Add the spinach to the boiling water for exactly one minute.
- 11. This short cooking process is called blanching.
- 12. Drain the spinach and rinse it immediately with cold water.
- 13. Squeeze the spinach firmly with your hands to remove as much water as possible.
- 14. Roughly chop the squeezed spinach.
- 15. Peel the garlic cloves.
- 16. Mince the garlic very finely.
- 17. Add the minced garlic to a bowl with the chopped spinach.
- 18. Add one tablespoon of olive oil.
- 19. Mix everything well together.
- 20. Season the mixture with salt.
- 21. Grate fresh nutmeg over it.
- 22. Wash the basil sprigs.
- 23. Shake them dry to remove the water.
- 24. Finely chop the basil leaves.
- 25. Add the chopped tomatoes to a separate bowl.
- 26. Mix the tomatoes with the chopped basil.
- 27. Season the tomato mixture with salt.
- 28. Add a pinch of sugar.
- 29. Season with cayenne pepper to taste.
- 30. Take a baking dish.
- 31. Brush the dish with the remaining olive oil.
- 32. Place a layer of lasagna sheets in the dish.
- 33. Spread a layer of the spinach mixture over it.
- 34. Add a layer of the tomato mixture on top.
- 35. Repeat these layers until the ingredients are used up.
- 36. Finish the lasagna with a top layer of lasagna sheets.
- 37. Slice the mozzarella cheese.
- 38. Place the mozzarella slices evenly on the top pasta layer.
- 39. Grate the Parmesan over the cheese.
- 40. Preheat the oven to 200 degrees Celsius.
- 41. If your oven has a fan setting, set it to 180 degrees Celsius.
- 42. For gas ovens, set the level to 3.
- 43. Place the lasagna in the preheated oven.
- 44. Bake it for about 25 minutes.
- 45. The lasagna is ready when the cheese on top is golden brown and crispy.
