🍽️ Crispy Spinach Pockets in Puff Pastry

Ingredients
- 200 g Spinach
- 100 g Wild Garlic
- Salt
- 60 g melted Butter
- 1 Onion
- 1 Clove of Garlic
- 125 g Quark
- 50 g grated Alpine Cheese
- 1 Egg
- Pepper
- 250 g Filo Dough
- 50 g Sesam
Instructions
- 1. Wash the spinach and wild garlic thoroughly. Remove any tough stems or wilted leaves. Briefly dip the greens into boiling water (this is called blanching). Remove them immediately and rinse with cold water to stop the cooking process. Squeeze the leaves firmly with your hands or a kitchen towel to remove as much excess water as possible. Roughly chop the greens and place them in a large bowl.
- 2. Peel the onion and the garlic clove. Chop both very finely. Heat one tablespoon of butter in a pan. Add the onions and garlic and sauté them for 2 to 3 minutes until they are soft and translucent (sweating). Remove the pan from the heat and let the mixture cool down. Mix the cooled onion-garlic mixture with the chopped spinach and wild garlic in the bowl.
- 3. Add the quark (fresh cheese), the cheese, and the egg to the vegetable mixture. Season everything generously with salt and pepper. Stir the ingredients well until a homogeneous filling is formed.
- 4. Turn on the oven and preheat it to 200 degrees Celsius with fan setting (convection).
- 5. Cut the phyllo dough into strips about 7 centimeters wide and 22 centimeters long. Take one strip and place about one tablespoon of the filling on the bottom end.
- 6. Fold the bottom left or right corner of the dough over the filling to create a small triangle. Continue this folding motion upwards repeatedly until the entire dough strip is wrapped into a multi-layered triangle.
- 7. Brush the open end of the triangle with a little butter and press it down slightly to secure it. Repeat this process with all remaining dough strips.
- 8. Place the finished triangles on a baking sheet lined with baking paper. Brush the top of the pockets with the remaining butter. Sprinkle sesame seeds over them.
- 9. Place the tray in the hot oven. Bake the pockets for 15 to 20 minutes until they are golden brown and crispy. Remove them from the oven and serve them warm or after cooling down.
