  1. 1. Thoroughly wash the spinach and arugula under running water.
  2. 2. Remove any tough stems or wilted leaves from the greens.
  3. 3. Tear the leaves into bite-sized pieces if they are too large.
  4. 4. Let the vegetables drain well in a colander.
  5. 5. Also wash the strawberries thoroughly.
  6. 6. Remove the green leafy caps from the tops of the berries.
  7. 7. Cut the strawberries in half or quarters depending on their size.
  8. 8. Put the balsamic vinegar, sugar, and oil into a small bowl.
  9. 9. Stir the ingredients vigorously with a fork or spoon.
  10. 10. Season the dressing to taste with salt.
  11. 11. Distribute the drained salad onto plates or bowls.
  12. 12. Place the prepared strawberries on top of the salad.
  13. 13. Drizzle the dressing evenly over the salad.
  14. 14. Shave Parmesan cheese over the finished salad.
  15. 15. Serve the salad immediately.
