🍕 Crispy Pizza with Spinach and Gorgonzola

Ingredients
- 200 g wheat wholemeal flour
- salt
- pepper (from the mill)
- 150 g quark
- 4 tbsp olive oil
- 400 g leaf spinach
- 2 garlic cloves
- 200 g chopped tomatoes (can)
- 1 tbsp tomato paste
- 1 tsp dried oregano
- nutmeg
- 75 g Gorgonzola
- olive oil
Instructions
- 1. Mix the flour with half a teaspoon of salt in a bowl.
- 2. Add the quark, three tablespoons of oil, and three to four tablespoons of cold water.
- 3. Knead the ingredients into a smooth and pliable dough.
- 4. Lightly grease a round pizza pan with a diameter of about 28 centimeters with oil.
- 5. Roll out the dough and place it in the prepared pan.
- 6. Press the dough slightly upwards at the edges to form a crust.
- 7. Wash the spinach thoroughly under running water.
- 8. Let the spinach drain and remove any inedible parts.
- 9. Put the spinach into a hot pot until it wilts.
- 10. Drain the spinach and immediately shock it with cold water.
- 11. Let the spinach drain again.
- 12. Squeeze the spinach firmly to remove as much liquid as possible.
- 13. Peel the garlic and slice it into thin pieces.
- 14. Mix the tomatoes with tomato paste, salt, pepper, and oregano.
- 15. Spread the tomato mixture evenly over the dough.
- 16. Distribute the squeezed spinach evenly over the tomato sauce.
- 17. Season the spinach with a pinch of salt, pepper, and a small amount of ground nutmeg.
- 18. Sprinkle the garlic slices and crumbled Gorgonzola cheese over the top.
- 19. Drizzle a little oil over the entire pizza.
- 20. Preheat the oven to 225 degrees Celsius with top and bottom heat.
- 21. Bake the pizza for about 20 minutes in the preheated oven.
