🍽️ Cannelloni with Minced Meat, Spinach and Feta Filling in Cheese Cream Sauce

Ingredients
- 400 g beef mince
- 1 onion
- 2 garlic cloves
- 250 g young spinach
- salt
- 120 g feta
- 1 tbsp freshly chopped oregano
- 1 egg
- pepper (from the mill)
- 12 cannelloni
- 2 tbsp butter
- 2 tbsp whole wheat flour
- 300 ml meat broth
- 200 ml whipping cream
- 50 g parmesan
- 50 g black olives (pitted)
Instructions
- 1. Place the minced meat into a large bowl.
- 2. Peel the onion and garlic and chop them very finely.
- 3. Wash the spinach and remove any tough stems.
- 4. Bring water to a boil in a pot and add some salt.
- 5. Add the spinach to the boiling water for 2 minutes (this is called blanching).
- 6. Drain the spinach and rinse it with cold water to cool it down immediately.
- 7. Squeeze the spinach firmly with your hands to remove excess liquid.
- 8. Finely chop the squeezed spinach.
- 9. Cut 60 grams of the feta into small cubes.
- 10. Add the diced onion, chopped garlic, chopped spinach, feta cubes, egg, and oregano to the minced meat.
- 11. Season the mixture with salt and pepper to taste.
- 12. Mix all the filling ingredients thoroughly together.
- 13. Fill the cannelloni tubes with the meat and spinach mixture.
- 14. Place the filled cannelloni side by side in a baking dish.
- 15. Melt the butter in a pot and stir in the flour until a foamy mixture forms.
- 16. Stir the broth into the butter-flour mixture.
- 17. Let the sauce simmer gently for 2 to 3 minutes.
- 18. Add the cream and let the sauce come to a boil until it thickens slightly.
- 19. Finally, season the sauce with salt.
- 20. Pour the cream sauce evenly over the cannelloni in the baking dish.
- 21. Grate the Parmesan and sprinkle it over the cannelloni.
- 22. Distribute the olives and the remaining feta over the surface.
- 23. Preheat the oven to 200 degrees (180 degrees for fan-assisted or gas mark 3).
- 24. Bake the cannelloni in the oven for about 45 minutes until golden brown.
