  1. 1. Place the minced meat into a large bowl.
  2. 2. Peel the onion and garlic and chop them very finely.
  3. 3. Wash the spinach and remove any tough stems.
  4. 4. Bring water to a boil in a pot and add some salt.
  5. 5. Add the spinach to the boiling water for 2 minutes (this is called blanching).
  6. 6. Drain the spinach and rinse it with cold water to cool it down immediately.
  7. 7. Squeeze the spinach firmly with your hands to remove excess liquid.
  8. 8. Finely chop the squeezed spinach.
  9. 9. Cut 60 grams of the feta into small cubes.
  10. 10. Add the diced onion, chopped garlic, chopped spinach, feta cubes, egg, and oregano to the minced meat.
  11. 11. Season the mixture with salt and pepper to taste.
  12. 12. Mix all the filling ingredients thoroughly together.
  13. 13. Fill the cannelloni tubes with the meat and spinach mixture.
  14. 14. Place the filled cannelloni side by side in a baking dish.
  15. 15. Melt the butter in a pot and stir in the flour until a foamy mixture forms.
  16. 16. Stir the broth into the butter-flour mixture.
  17. 17. Let the sauce simmer gently for 2 to 3 minutes.
  18. 18. Add the cream and let the sauce come to a boil until it thickens slightly.
  19. 19. Finally, season the sauce with salt.
  20. 20. Pour the cream sauce evenly over the cannelloni in the baking dish.
  21. 21. Grate the Parmesan and sprinkle it over the cannelloni.
  22. 22. Distribute the olives and the remaining feta over the surface.
  23. 23. Preheat the oven to 200 degrees (180 degrees for fan-assisted or gas mark 3).
  24. 24. Bake the cannelloni in the oven for about 45 minutes until golden brown.
