🍽️ Fresh Spinach and Avocado Salad with Fried Salami

Ingredients
- 200 g young spinach leaves
- 1 avocado
- lemon (juice)
- 200 g shiitake mushrooms
- 100 g salami (in thin slices)
- salt
- pepper (from the mill)
- 2 tbsp white wine vinegar
- 2 tbsp balsamic vinegar
- 7 tbsp olive oil
Instructions
- 1. Wash the spinach thoroughly.
- 2. Remove damaged leaves and tough stems.
- 3. Spin the spinach dry.
- 4. Cut the avocado in half.
- 5. Remove the pit.
- 6. Peel the avocado.
- 7. Cut the flesh into small cubes.
- 8. Drizzle the avocado with lemon juice immediately.
- 9. Clean the mushrooms.
- 10. Heat two tablespoons of olive oil in a pan.
- 11. Fry the mushrooms briefly and vigorously.
- 12. Remove the mushrooms from the pan.
- 13. Set the mushrooms aside.
- 14. Fold the salami slices together.
- 15. Fry the salami briefly in the remaining fat.
- 16. Whisk the vinegars together in a small bowl.
- 17. Season the mixture with salt.
- 18. Season the mixture with pepper.
- 19. Stir the remaining oil into the vinegar mixture.
- 20. Place the spinach on the plates.
- 21. Distribute the avocado on the spinach.
- 22. Add the mushrooms to the salad.
- 23. Place the fried salami on top.
- 24. Drizzle the finished salad with the sauce.
