🍽️ Spinach with Apricots and Pangasius

Ingredients
- 100 g onions (2 onions)
- 2 tbsp germ oil
- 240 g apricots (can; drained weight)
- 250 g leaf spinach (frozen)
- 2 pangasius fillets (approx. 120 g each, preferably organic pangasius)
- 20 g sunflower seeds
- salt
- pepper
Instructions
- 1. Peel the onions.
- 2. Cut the onions into thin strips.
- 3. Heat one tablespoon of oil in a pot.
- 4. Sauté the onions over low heat with the lid on for about five minutes.
- 5. Drain the apricots in a sieve.
- 6. Cut the apricots into strips.
- 7. Add the spinach to the onions in the pot.
- 8. Sauté the spinach over low heat with the lid on for about five minutes.
- 9. Rinse the pangasius fillets.
- 10. Pat the fillets dry with kitchen paper.
- 11. Toast the sunflower seeds in a non-stick pan over medium heat until light brown.
- 12. Remove the seeds from the pan and place them on a plate.
- 13. Let the seeds cool on the plate.
- 14. Heat the remaining seed oil in the same pan.
- 15. Season the pangasius fillets with salt and pepper.
- 16. Fry the fillets over medium heat for about two minutes on each side.
- 17. Add the apricot strips to the spinach mixture.
- 18. Heat the vegetables with the apricots briefly.
- 19. Finally season the spinach-apricot mixture with salt and pepper.
- 20. Plate the vegetable mixture.
- 21. Place the fried pangasius fillets on top of the vegetables.
- 22. Sprinkle the dish with the cooled sunflower seeds.
