  1. 1. Peel the onions.
  2. 2. Cut the onions into thin strips.
  3. 3. Heat one tablespoon of oil in a pot.
  4. 4. Sauté the onions over low heat with the lid on for about five minutes.
  5. 5. Drain the apricots in a sieve.
  6. 6. Cut the apricots into strips.
  7. 7. Add the spinach to the onions in the pot.
  8. 8. Sauté the spinach over low heat with the lid on for about five minutes.
  9. 9. Rinse the pangasius fillets.
  10. 10. Pat the fillets dry with kitchen paper.
  11. 11. Toast the sunflower seeds in a non-stick pan over medium heat until light brown.
  12. 12. Remove the seeds from the pan and place them on a plate.
  13. 13. Let the seeds cool on the plate.
  14. 14. Heat the remaining seed oil in the same pan.
  15. 15. Season the pangasius fillets with salt and pepper.
  16. 16. Fry the fillets over medium heat for about two minutes on each side.
  17. 17. Add the apricot strips to the spinach mixture.
  18. 18. Heat the vegetables with the apricots briefly.
  19. 19. Finally season the spinach-apricot mixture with salt and pepper.
  20. 20. Plate the vegetable mixture.
  21. 21. Place the fried pangasius fillets on top of the vegetables.
  22. 22. Sprinkle the dish with the cooled sunflower seeds.
