🍽️ Spinach Strudel

Ingredients
- 1 onion
- 2 tbsp butter
- 650 g spinach
- 200 g feta
- salt
- pepper (from the mill)
- nutmeg
- 1 tbsp herbs (finely chopped)
- 330 g frozen puff pastry
- milk (of the strudel)
Instructions
- 1. Let the puff pastry thaw side by side.
- 2. Wash the spinach thoroughly, trim it, and let it drain.
- 3. Peel the onion, dice it finely, and sauté it in butter in a pot until translucent. Then add the spinach, let it wilt, and simmer for about 6 minutes. Season with salt, pepper, and nutmeg, stir in the herbs, and let the mixture cool.
- 4. Cut the feta into small cubes and fold them into the spinach mixture.
- 5. Roll out the puff pastry. Distribute the spinach filling on top, roll up the pastry, and brush with milk.
- 6. Place the strudel on a baking sheet lined with baking paper and bake in a preheated oven at 220° for about 30 minutes until golden brown.
- 7. Serve with a salad and yogurt sauce if desired.
