  1. 1. Let the puff pastry thaw side by side.
  2. 2. Wash the spinach thoroughly, trim it, and let it drain.
  3. 3. Peel the onion, dice it finely, and sauté it in butter in a pot until translucent. Then add the spinach, let it wilt, and simmer for about 6 minutes. Season with salt, pepper, and nutmeg, stir in the herbs, and let the mixture cool.
  4. 4. Cut the feta into small cubes and fold them into the spinach mixture.
  5. 5. Roll out the puff pastry. Distribute the spinach filling on top, roll up the pastry, and brush with milk.
  6. 6. Place the strudel on a baking sheet lined with baking paper and bake in a preheated oven at 220° for about 30 minutes until golden brown.
  7. 7. Serve with a salad and yogurt sauce if desired.
