🍽️ Chicken Skewers with Mango Sauce

Ingredients
- 4 chicken breast fillets (150 g each)
- 2 garlic cloves
- 2 tbsp vegetable oil
- 1 lemon
- 0.5 tsp ground cumin
- 0.5 tsp ground nutmeg
- 0.5 tsp ground coriander
- 0.5 tsp ground pepper
- 0.5 tsp sweet paprika powder
- 2 tsp fresh grated ginger
- salt
- pepper (from the mill)
- 150 g mango pulp
- 1 shallot
- 1 garlic clove
- 1 tbsp –2 tbsp vegetable oil
- 0.5 tsp brown sugar
- 1 piece fresh ginger (approx. 2 cm)
- 2 tbsp apple cider vinegar
- 50 ml apple juice
- salt
- cayenne pepper
- 250 g broccoli
- 150 g carrots
- 100 g red cabbage
- 1 tbsp vegetable oil
- salt
- white pepper
- 100 ml vegetable broth
Instructions
- 1. Cut the chicken meat into thin strips.
- 2. Place the meat strips in a shallow bowl.
- 3. Peel the garlic clove.
- 4. Mix the oil, lemon juice, spices, and ginger.
- 5. Press the garlic into the marinade.
- 6. Season the marinade with salt and pepper.
- 7. Coat the chicken meat thoroughly with the marinade.
- 8. Cover the bowl with aluminum foil.
- 9. Let the meat marinate in the refrigerator for at least 2 hours.
- 10. Dice the mango flesh into small pieces.
- 11. Peel the shallot and the garlic.
- 12. Finely chop the shallot and garlic.
- 13. Heat some oil in a pan.
- 14. Sauté the chopped vegetables in the hot oil.
- 15. Sprinkle sugar over the vegetables.
- 16. Caramelize the sugar briefly.
- 17. Peel the ginger.
- 18. Grate the ginger finely.
- 19. Add the mango cubes and grated ginger to the pan.
- 20. Sauté the ingredients briefly.
- 21. Deglaze the sauce with vinegar and apple juice.
- 22. Cover the pan.
- 23. Simmer the sauce for 3 to 5 minutes.
- 24. Then puree the sauce finely.
- 25. Season the sauce with salt and cayenne pepper.
- 26. Clean and wash the broccoli.
- 27. Divide the broccoli into small florets.
- 28. Chop the broccoli stem into small pieces.
- 29. Peel the carrots.
- 30. Cut the carrots into thin sticks.
- 31. Wash the cabbage.
- 32. Cut the cabbage into thin strips.
- 33. Heat oil in a large pan.
- 34. Sauté the vegetables in the hot oil.
- 35. Season the vegetables with salt and pepper.
- 36. Pour some broth over the vegetables.
- 37. Cook the vegetables until they are tender-crisp.
- 38. Stir about half of the mango sauce into the vegetables.
- 39. Thread the marinated chicken pieces onto skewers.
- 40. Preheat the grill.
- 41. Place aluminum foil on the grill grate.
- 42. Place the skewers on the aluminum foil.
- 43. Grill the skewers for 8 to 10 minutes.
- 44. Serve the chicken skewers in small bowls.
- 45. Add the vegetables to the skewers.
- 46. Optionally serve rice on the side.
