🍽️ Grilled Seafood Skewers with Lime Dip

Ingredients
- 1 zucchini
- 200 g salmon fillet (kitchen-ready, skinless)
- 200 g zander fillet (kitchen-ready, with skin)
- 200 g shrimp (kitchen-ready, peeled and deveined)
- 2 unpeeled limes
- 1 tsp red peppercorns
- 0.5 tsp black peppercorns
- sea salt
- 4 tbsp olive oil
- 500 g plain yogurt
- pepper (from the mill)
- sugar
Instructions
- 1. Wash the zucchini thoroughly and slice it into rounds about 1 cm thick.
- 2. Wash the fish, pat it dry with a kitchen towel, and cut it into bite-sized cubes.
- 3. Rinse the shrimp under running water.
- 4. Rinse two limes with hot water.
- 5. Finely grate the zest of one lime and squeeze out its juice.
- 6. Slice the second lime into thin rounds.
- 7. Coarsely crush the peppercorns in a mortar.
- 8. Mix the crushed peppercorns with a generous pinch of salt, the oil, and half of the lime juice.
- 9. Thread the fish cubes, zucchini slices, and shrimp alternately onto the skewers.
- 10. Brush the skewers with the lime marinade.
- 11. Let the marinated skewers rest for 30 minutes.
- 12. Stir the yogurt with the remaining lime juice.
- 13. Season the yogurt mixture with salt, pepper, and a pinch of sugar.
- 14. Spoon the dip into small bowls.
- 15. Garnish the dip with the lime zest.
- 16. Place the skewers along with the lime slices on a hot grill.
- 17. Grill the skewers for 8 to 10 minutes, turning them occasionally.
- 18. Serve the skewers together with the dip.
