🍽️ Baked Spinach with Sunny-Side-Up Eggs

Ingredients
- 800 g fresh leaf spinach
- 2 shallots
- 1 clove garlic
- 4 tbsp olive oil
- salt
- pepper (from the mill)
- nutmeg
- 80 g Parmesan (1 piece)
- 100 g whipping cream
- 4 eggs
Instructions
- 1. Wash the spinach thoroughly and let it drain well.
- 2. Peel the shallots and garlic and chop them very finely.
- 3. Grease four small baking ramekins with one tablespoon of olive oil each.
- 4. Heat the remaining olive oil in a frying pan.
- 5. Add the chopped shallots and garlic and fry them for two minutes over medium heat.
- 6. Add the spinach to the pan.
- 7. Let the spinach wilt under a lid over low heat.
- 8. Season the spinach with salt, pepper, and a pinch of nutmeg.
- 9. Grate the Parmesan cheese finely.
- 10. Stir the cream and half of the Parmesan into the spinach.
- 11. Fill the spinach mixture into the prepared ramekins.
- 12. Use a spoon to make a small indentation in the center of each portion.
- 13. Crack an egg and carefully place it into the indentation.
- 14. Sprinkle everything with the remaining Parmesan.
- 15. Preheat the oven to 200 degrees (180 degrees for fan-assisted or gas mark 3).
- 16. Bake the ramekins for 10 to 15 minutes until the egg white is set.
- 17. Serve the dish with additional salt and pepper to taste.
