  1. 1. Wash the spinach thoroughly and let it drain well.
  2. 2. Peel the shallots and garlic and chop them very finely.
  3. 3. Grease four small baking ramekins with one tablespoon of olive oil each.
  4. 4. Heat the remaining olive oil in a frying pan.
  5. 5. Add the chopped shallots and garlic and fry them for two minutes over medium heat.
  6. 6. Add the spinach to the pan.
  7. 7. Let the spinach wilt under a lid over low heat.
  8. 8. Season the spinach with salt, pepper, and a pinch of nutmeg.
  9. 9. Grate the Parmesan cheese finely.
  10. 10. Stir the cream and half of the Parmesan into the spinach.
  11. 11. Fill the spinach mixture into the prepared ramekins.
  12. 12. Use a spoon to make a small indentation in the center of each portion.
  13. 13. Crack an egg and carefully place it into the indentation.
  14. 14. Sprinkle everything with the remaining Parmesan.
  15. 15. Preheat the oven to 200 degrees (180 degrees for fan-assisted or gas mark 3).
  16. 16. Bake the ramekins for 10 to 15 minutes until the egg white is set.
  17. 17. Serve the dish with additional salt and pepper to taste.
