🍽️ Coconut-Almond Speculois Balls

Ingredients
- 1 Organic Orange
- 60 g Coconut oil (3 tbsp)
- 120 g Almond butter (12 tbsp)
- 20 g Agave syrup (2 tbsp)
- 40 g Almonds (2 tbsp)
- 100 g Whole wheat cookies
- 50 g fine spelt flakes (5 tbsp)
- 30 g ground flaxseeds (3 tbsp)
- 30 g ground almonds
- 1 pinch Salt
- 2 tbsp Speculoos spice
Instructions
- 1. Rinse the orange under hot water and pat it dry.
- 2. Grate the fine orange layer of the peel (the zest).
- 3. Place the orange zest, coconut oil, almond butter, and agave syrup into a pot.
- 4. Gently warm the mixture until all ingredients have melted into a liquid mass.
- 5. Finely chop the almonds in the meantime.
- 6. Place the whole grain cookies into a freezer bag.
- 7. Crush the cookies into fine crumbs using a rolling pin.
- 8. Set aside half of the cookie crumbs.
- 9. Mix the chopped almonds with the remaining half of the cookie crumbs.
- 10. Add the spelt flakes, flaxseeds, ground almond flour, salt, and speculois spice mix.
- 11. Stir the warm melted coconut oil and almond butter ingredients into the dry mixture.
- 12. Mix everything thoroughly until a uniform dough forms.
- 13. Place the speculois mixture in the refrigerator for 15 minutes to cool down.
- 14. Shape about 30 small balls from the chilled mixture.
- 15. Roll the balls in the reserved cookie crumbs until they are completely covered.
- 16. Serve the balls immediately or store them in the refrigerator if needed.
