🍽️ Crispy Bacon Dumplings

Ingredients
- 350 g stale rolls
- 200 g streaky, smoked bacon cubes
- 1 small onion (finely chopped)
- 3 tbsp parsley (chopped)
- 4 eggs
- 200 ml milk
- 6 tbsp flour
- 1 tbsp soft butter
- salt
- pepper (from the mill)
Instructions
- 1. Cut the bread rolls into cubes of about 1 cm.
- 2. Place the bread cubes into a large bowl.
- 3. Cut the bacon into small pieces.
- 4. Fry the bacon in a pan until the fat has melted.
- 5. Add the chopped onions to the pan.
- 6. Sauté the onions until they are translucent.
- 7. Stir the chopped parsley into the onions.
- 8. Add the bacon and onion mixture to the bread cubes.
- 9. Mix everything together thoroughly.
- 10. Whisk the eggs with the milk.
- 11. Pour the egg and milk mixture over the bread cubes.
- 12. Add the flour and the butter.
- 13. Season the mixture with salt and pepper.
- 14. Mix all ingredients well.
- 15. Let the mixture rest for about 30 minutes.
- 16. Fill a large pot with water and add salt.
- 17. Bring the water to a boil.
- 18. Reduce the heat so that the water is just simmering.
- 19. Shape a small test dumpling from the mixture.
- 20. Place the test dumpling into the water.
- 21. Check if the dumpling holds together.
- 22. If it falls apart, stir in a little more flour.
- 23. If it is too firm, stir in a little more milk.
- 24. Wet your hands with water.
- 25. Shape the remaining mixture into dumplings.
- 26. Gently place the dumplings into the simmering water.
- 27. Let the dumplings cook for about 15 to 20 minutes.
- 28. Remove the cooked dumplings with a slotted spoon.
- 29. Let the dumplings drain briefly.
