  1. 1. Preheat the oven to 160 degrees Celsius with top and bottom heat.
  2. 2. Thoroughly wash the chicken breasts.
  3. 3. Pat the chicken breasts dry with a kitchen towel.
  4. 4. Cut a pocket lengthwise into each breast.
  5. 5. Drain the mozzarella in a colander.
  6. 6. Slice the mozzarella.
  7. 7. Stuff the chicken breasts with the mozzarella slices.
  8. 8. Season the outside of the chicken breasts with cayenne pepper.
  9. 9. Grate lemon zest over the seasoned side.
  10. 10. Wrap each breast with a slice of bacon.
  11. 11. Heat oil in a hot casserole dish.
  12. 12. Fry the chicken breasts until golden brown on all sides.
  13. 13. Wash the cherry tomatoes.
  14. 14. Add the tomatoes to the casserole dish.
  15. 15. Deglaze the dish with wine.
  16. 16. Place fresh sage leaves on top of the chicken breasts.
  17. 17. Place the casserole dish in the preheated oven.
  18. 18. Simmer the dish for about 25 minutes.
  19. 19. Serve the chicken with the cherry tomatoes.
