🍽️ Mozzarella-stuffed bacon chicken with cherry tomatoes

Ingredients
- 4 chicken breast fillets (kitchen-ready, skinless, á 160-180 g)
- 1 ball mozzarella (approx. 125 g)
- cayenne pepper
- 1 tbsp lemon zest
- 8 slices breakfast bacon
- 2 tbsp olive oil
- 400 g cherry tomatoes
- 150 ml dry white wine
- sage leaf (for garnish)
Instructions
- 1. Preheat the oven to 160 degrees Celsius with top and bottom heat.
- 2. Thoroughly wash the chicken breasts.
- 3. Pat the chicken breasts dry with a kitchen towel.
- 4. Cut a pocket lengthwise into each breast.
- 5. Drain the mozzarella in a colander.
- 6. Slice the mozzarella.
- 7. Stuff the chicken breasts with the mozzarella slices.
- 8. Season the outside of the chicken breasts with cayenne pepper.
- 9. Grate lemon zest over the seasoned side.
- 10. Wrap each breast with a slice of bacon.
- 11. Heat oil in a hot casserole dish.
- 12. Fry the chicken breasts until golden brown on all sides.
- 13. Wash the cherry tomatoes.
- 14. Add the tomatoes to the casserole dish.
- 15. Deglaze the dish with wine.
- 16. Place fresh sage leaves on top of the chicken breasts.
- 17. Place the casserole dish in the preheated oven.
- 18. Simmer the dish for about 25 minutes.
- 19. Serve the chicken with the cherry tomatoes.
