  1. 1. Mix the flour with the yeast in a bowl.
  2. 2. Add the salt, the oil, and 225 ml of lukewarm water.
  3. 3. Knead the ingredients into a smooth dough.
  4. 4. Cover the dough and place it in a warm spot.
  5. 5. Wait until the volume of the dough has doubled.
  6. 6. Dice the bacon finely.
  7. 7. Fry the bacon in a pan without extra fat until crispy.
  8. 8. Let the bacon drain on kitchen paper.
  9. 9. Peel the onions and slice them into rings.
  10. 10. Sauté the onion rings in the same pan until translucent, but not brown.
  11. 11. Let the onions cool down.
  12. 12. Mix the crème fraîche with the quark.
  13. 13. Season the cream generously with salt, pepper, nutmeg, and cumin.
  14. 14. Knead the risen dough briefly again.
  15. 15. Divide the dough into two halves.
  16. 16. Roll each half of the dough into an oval shape about 5 mm thick.
  17. 17. Place the dough sheets on baking trays lined with baking paper.
  18. 18. Spread the cream evenly over the dough sheets.
  19. 19. Distribute the cooled onions and bacon over the cream.
  20. 20. Preheat the oven to 240 °C (fan: 220 °C; gas: setting 4).
  21. 21. Bake the flatbreads for approx. 15 minutes until golden brown.
