🍽️ Crispy Bacon and Onion Flatbread

Ingredients
- 375 g spelt flour Type 1050
- 1 packet dry yeast
- 1 tsp salt
- 2 tbsp olive oil
- 225 ml lukewarm water
- 100 g turkey bacon
- 3 onions
- 250 g crème fraîche
- 100 g quark (20 % fat)
- pepper (freshly ground)
- nutmeg (freshly grated)
- ground caraway seeds
Instructions
- 1. Mix the flour with the yeast in a bowl.
- 2. Add the salt, the oil, and 225 ml of lukewarm water.
- 3. Knead the ingredients into a smooth dough.
- 4. Cover the dough and place it in a warm spot.
- 5. Wait until the volume of the dough has doubled.
- 6. Dice the bacon finely.
- 7. Fry the bacon in a pan without extra fat until crispy.
- 8. Let the bacon drain on kitchen paper.
- 9. Peel the onions and slice them into rings.
- 10. Sauté the onion rings in the same pan until translucent, but not brown.
- 11. Let the onions cool down.
- 12. Mix the crème fraîche with the quark.
- 13. Season the cream generously with salt, pepper, nutmeg, and cumin.
- 14. Knead the risen dough briefly again.
- 15. Divide the dough into two halves.
- 16. Roll each half of the dough into an oval shape about 5 mm thick.
- 17. Place the dough sheets on baking trays lined with baking paper.
- 18. Spread the cream evenly over the dough sheets.
- 19. Distribute the cooled onions and bacon over the cream.
- 20. Preheat the oven to 240 °C (fan: 220 °C; gas: setting 4).
- 21. Bake the flatbreads for approx. 15 minutes until golden brown.
