🍲 Creamy Bacon Tomato Soup

Ingredients
- 8 ripe tomatoes
- 1 onion
- 1 garlic clove
- 2 tbsp olive oil
- 200 g bacon belly (raw smoked, sliced)
- 50 g tomato paste
- 1 tbsp paprika powder (sweet)
- 750 ml vegetable broth
- 3 sprigs thyme
- 1 pinch sugar
- sea salt
- Pepper (from the mill)

Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Remove the hard stem area at the top.
- 3. Pour boiling water over the tomatoes briefly.
- 4. Peel the skin off the tomatoes.
- 5. Cut the peeled tomatoes into small cubes.
- 6. Peel the onion and the garlic.
- 7. Dice the onion and garlic very finely.
- 8. Heat some olive oil in a pot.
- 9. Sauté the onions and garlic until translucent.
- 10. Cut the bacon into thin strips.
- 11. Fry the bacon strips briefly with the onions.
- 12. Stir the tomato paste into the bacon-onion mixture.
- 13. Add the diced tomatoes to the pot.
- 14. Pour in the broth.
- 15. Add the thyme sprigs and paprika powder to the soup.
- 16. Cover the pot halfway.
- 17. Let the soup simmer on low heat for about 30 minutes.
- 18. Remove the thyme sprigs from the soup.
- 19. Season the soup with a pinch of sugar.
- 20. Salt the soup with sea salt.
- 21. Finally, pepper the soup to taste.
- 22. Pour the finished soup into plates or deep bowls.
- 23. Garnish the bowls with fresh thyme leaves.
- 24. Serve the soup hot.
- 25. Serve fresh rolls as a side dish.
